Thai-ing It Together

The past 24 hours have been pretty hectic for us; it’s amazing that I got any exercise in. I kept cooking to a minimum in an effort to be time efficient, but I still managed to come up with a few tasty creations.

I started with my pre-obstacle course/walk meal of soup and chocolate milk:

1 Can Trader Joe’s low sodium minestrone soup (200 cal) with 2 TBSP peas added (30 cal) and topped with an egg (75 cal) fried in Pam olive oil cooking spray. I’ve had a box of “Everything!” Matzo crackers in the pantry for awhile, so I decided to try one (110 cal); the sodium was just 150mg, which is pretty decent. I don’t know where the chocolate milk came from, but at the last second it sounded good. So I made it with 1 cup Calorie Countdown fat free milk (45 cal) and 2 TBSP light Hershey syrup (50 cal). Weird meal, but really good and just ~510 calories.

After my walk/obstacle course romp, I waited for awhile, then had 1/2 cup Friendship 2% cottage cheese (90 cal) and 1 medium banana (110 cal) before I went downstairs to do upper body strength training and 5.5 miles on my recumbent bike. When I came up, I started making the wrap that I’ve been wanting to recreate for awhile now; Thai chicken with peanuts and veggies!

I grilled the chicken breast a little earlier, so that saved some time. First I made the peanut sauce with:

  • 1/2 teaspoon sesame oil (20 cal)
  • ~1.5 TBSP rice vinegar (5 cal)
  • 1/2 teaspoon Bragg amino acid
  • 1 TBSP PB2 powdered peanut butter (27 cal)
  • Dash of cayenne pepper

I mixed it together, then set it aside while I assembled the wrap with:

  • 1 Joseph’s whole wheat Lavash roll-up (220 cal)
  • Layer of fresh baby spinach
  • 1 sliced plum tomato
  • Red onion slices
  • 2 baby carrots, sliced
  • Cucumber, peeled and sliced thinly
  • 3oz grilled chicken breast (120 cal?)
  • 1/4 oz unsalted peanuts (45 cal)
  • Then I poured the sauce over it and wrapped it up and cut it in half

With 1oz Kettle Bakes baked potato chips (120 cal) on the side

It was as awesome as I was hoping it would be!!!!!! Very, very big and filling and SO tasty! YUM! I’m glad I used the Lavash roll-up, because I don’t think I would have gotten as good of a result with the smaller wraps that I have. It was just perfect! Loved it. Can’t wait to have it again. Maybe right now? hehe :)
