I’d like to say we had an adventurous fun-filled weekend, but we actually slept through most of it!
We were Jenn and Dustin Van Winkle all day Saturday, then we finally came out of hibernation on Sunday.
Exercise was totally off my radar, as was cooking. I just wasn’t into either. Perhaps on some subconscious level I am saving my energy for the upcoming week because it’s time to start packing up! *sniff* Moving is the WORST! At least we’re only moving 10 miles away this time and not 800+ like last time.
On Sunday we decided to take a drive to Orange county to see our favorite house that’s for sale. We visit it and make sure it’s still there and not taken away by a tornado or something LOL. On the way, we stopped for breakfast at the diner in Middletown. I ordered Challah French toast and Dustin got eggs, ham, toast AND Nutella crepes!
Could not resist sharing them with him!!

*giggles* I had one of them. Nutella is SOOOOOOO good. You could spread it on a frisbee and still enjoy it lol.
My French toast, which I ate all of with 1 of the syrup and none of the butter. 3 syrups? Isn’t that a bit much? That’s sweetness overload to me.


My beverage of choice was an unsweetened iced tea that I added chemicals in pink paper to.
The French toast was yummy!
This held me through the day, so our next and last meal was dinner at the Liberty diner. I ordered hummus with a homemade pita and a grilled shrimp and avocado salad with blue cheese:

The pita was so fresh and soft, yum! I ate all of it with about 1/4 of the hummus. The salad was DELICIOUS! You see that cup of white stuff by the pita plate? I thought that was yogurt dipping sauce because it was SO large, so I dipped a pita triangle into it and it turned out to be BLUE CHEESE DRESSING! Holy over-portions, Batman!
I’m glad they put the dressing for my salad on the side because that had to be at least a cup of dressing. Geesh!

I used a few spoonfuls on my salad, which I absolutely loved. It was so tasty and I especially loved the olive in the center. How did they know I was craving a kalamata olive!? Yummmmmm

I ate all of it, with the exception of some of the leafy greens and veggies. I can’t help that the tastiest parts happened to be the most caloric ones. hehe
Ok, my sodium intake has been through the roof and into outer space. So, starting tomorrow I am doing a 30 day 1500mg or less sodium challenge. It’s gonna be tough, but I can do it. I’m sure there will be days here and there where I break my goal for the day, but that’s ok as long as I’m staying low the majority of the time (e.g., at least 6 days a week). I already started planning my menu for this week and let me tell you, it’s tough! Especially when I am planning 2500-2800 calorie days. That means that some of my snacks/meals have to be close to 0mg sodium to stay low. I have been averaging 3000+mg per day for a long time now and that’s a MAJOR no-no for me. I am not designed to have a natural healthy balance with water and sodium.
The only way the scale moves in my favor, even when I am in a deficit is if I 1-) Stay within my calories (obviously) 2-) Exercise and 3-) Keep my sodium between 1500-2000mg most days or else I stay puffed up or gain even more water weight. It’s frustrating but I need to cut down on my sodium or else I am going to make this a lot harder on myself than need be. I can do it!
