YAY YANKEES!!!!!! We proudly watched as the New York Yankees won their 27th World Series championship tonight.

Unfortunately, I didn’t have peanuts or Cracker Jack, but I did have a bountiful salad of assorted colors, textures, and flavors:

Aunt Flo arrived a couple days ago, so I’ve been feeling very blah and out of it. I kept things simple the past few days and tried to eat up things in the fridge and freezer so I wouldn’t have to cook anything. Salads are one of my favorite “go to” meals for convenience and minimal effort. This delicious salad included:
- A bed of mixed lettuces
- Grape tomatoes
- Red onion
- Yves veggie pepperoni
- 1oz Shop Rite no salt added Swiss cheese (100 cal)
- 1 Dole pineapple ring (30 cal)
- 3 kalamata olives
- 1 It’s All Good gardein chik’n cutlet (70 cal)
- 2 gerkin dill pickles (5 cal)
- 1 teaspoon extra virgin olive oil (40 cal)
- Red wine vinegar


I treated my fridge like a salad bar and threw in everything I could find. lol It ended up working out very nicely. I loved the variety and especially loved how it only took about 5 minutes to make.
I dipped in the leftover Halloween candy all week.
Ugh, it’s been my #1 snack in between meals; I need to get rid of it!! After the game, we were hungry, so I opted for something even simpler and easier than my last meal: A grazing plate.

1 homemade sodium-free bagel (~210 cal, see recipe below), 1.5 oz Cabot 50% reduced fat cheddar cheese (105 cal) and 1 Honey Crisp apple that was absolutely fantastic! Sweet as honey? CHECK! Crisp? CHECK! It was perfect. @ $2.69/lb it should be.

I’m off to read and relax now. I definitely want to exercise tomorrow. I feel terribly puffy and look awful. You can really notice the water-weight in my face, even my eyelids swell up.
I have just a few weeks until my 30th birthday and with the holidays on the horizon, I have to make some serious progress. Plus the in-laws are coming for a visit in a few weeks. *sigh* So much to do, so little time! Keep me accountable, guys!!
