My mom bought a package of bone-in pork chops the other day, so I thought they would be the perfect component to use with this Ian’s whole wheat panko breadcrumbs that I picked up at Mother Earth’s:

Along with it being whole wheat, it’s also very low in sodium (23mg per serving!). Being it’s so low in sodium, I decided to mix it with this Garlic Gold Italian Gold Nuggets seasoning, which is sodium-free and smells fantastic!!

Not wanting the panko crust to be too bland, I thought it would be a good time to try the AlsoSalt salt substitute that I haven’t used yet. So I mixed: the panko, Italian seasoning, and about 1/4 teaspoons AlsoSalt together. Then I egged and breaded the pork chops the traditional way (coat in egg > immediately coat with breadcrumbs). I preheated the oven to 400F, then placed the breaded chops on a baking sheet lined with nonstick foil and baked them for about 25-30 minutes. My mom made mashed potatoes and steamed a bag of frozen string beans while they baked.
Last night’s dinner menu:
- Baked bone-in pork chops with a whole wheat Italian seasoned panko crust
- Mashed potatoes
- Steamed string beans
- Mott’s no sugar added applesauce

SO gooood! I was very pleased with how the pork chops turned out; didn’t miss the oil from frying whatsoever. They tasted perfect! Crispy, moist and very flavorful. I’m pretty sure the AlsoSalt enhanced the panko + Italian herbs beautifully because it tasted like it had salt in it, but it was salt-free. I also mixed a packet of it (AlsoSalt) in my mashed potatoes, and it tasted JUST like salt. We have a winner, folks!! Finally a salt substitute that tastes like salt, with NO metallic aftertaste. <3 I'm stoked about this, I'm going to stock up on it.

It's a gorgeous day out!! Fridays are usually short workdays around here, so we're going shopping and out to dinner. We watched Natural Born Killers on DVD last night and it gave me funky dreams, LOL. Awesome movie! I might have to cleanse my palate with something more, umm, wholesome tonight.

As you can see, I decided to get ambitious with finishing up my blog’s makeover. When I installed a new theme a few months ago, I intended to have it completed within a few weeks. Well, weeks became months, and now I’m finally getting around to completing it.
I woke up at 3:30AM yesterday morning after about 5 hours of sleep and started putzing around in Photoshop. Before I knew it I created a color scheme that I was digging, so I rolled with it! Along with the cosmetic changes, you’ll also see new goodies in the next few weeks. I have so much stuff in the queue just dying to make its debut. I’m really excited about all of it and hope you’ll like it!!
I used up the last of my grilled shrimp + scallops in last night’s dinner.
I have to get more, they’re just too delicious not to make again and again. This salad was AAAAAAMAAAAAAAZZZZZZING, though!




- A bed of mixed greens tossed in 1 teaspoon EVOO (40 cal) and red wine vinegar (10 cal)
- Topped with: 1 plum tomato, shrimp + scallops grilled on wooden skewers, and 1oz extra creamy blue cheese crumbles (110 cal)
- With 1 Martin’s potato roll (130 cal) on the side
I don’t know how many calories were in the shrimp + scallops, so I’ll just estimate this to be around 600 calories, including the roll.
It was one of the best salads of the year! Very filling and fun to eat because it took awhile to eat. I’m not into bite efficiency, lol. I like meals to be long and voluminous.

It’s a bright and sunny day out, so I’m hoping to go for a walk this afternoon. We bought a new TV stand for our bedroom last night, we hope to find a new bed set soon, too. I’m redecorating our bedroom, I think this might become expensive enough to qualify for my anniversary present.
I expect Aunt Flo to show up exactly on our anniversary next Wednesday, so we decided to postpone our NYC plans for a couple of weeks being I won’t feel well enough to be touristy with her presence. She always seems to show up on holidays and trips. Coincidence? I think not.
She wants to be part of everything, yet she’s never invited!! LOL Ok, would love to stick around to bemoan her existence, but the day is calling.

I love when recipes touch upon several taste sensations, especially contrasting ones. It’s even better when said flavors are in a cookie!

Oatmeal Cranberry White Chocolate Chunk Cookies
(Found on the back of Ocean Spray Craisins package)
2/3 cup butter
2/3 cup brown sugar
2 large eggs
1-1/2 cups old-fashioned rolled oats
1-1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray Craisins Sweetened Dried Cranberries
2/3 cup white chocolate chunks or chips
- Preheat oven to 375F. Using an electric mixer, beat butter and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in sweetened dried cranberries and white chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack. Makes approximately 2-1/2 dozen (30) cookies.
Calories: 120 each (approx.)

Note: I baked mine on 350F for 8 minutes to keep them super soft, and I omitted the salt. If you want a crisper cookie, bake at the recommended temperature for full 12 minutes.
They came out excellent! I normally don’t like white chocolate on its own, but I like it in baked goodies. This recipe would be perfect for Christmas cookies. In fact, that’s what I instantly thought of when I bit into one.
Baking drained most of my creativity in the kitchen for the day, so I kept things simple for lunch + dinner. I tried a new Chobani flavor with lunch: Strawberry banana!



- 3 slices Tofurky (60 cal) on 2 slices Food for Life Genesis 1:29 sprouted grain seedy bread (160 cal) with romaine lettuce leaves (5 cal) and no salt added mustard (10 cal)
- 1 container Chobani 2% strawberry banana Greek yogurt (160 cal) topped with 1/2 medium banana (55 cal) and 7 almonds (50 cal)
Calories: 500
Loved the strawberry banana yogurt!! So tasty and creamy. I also enjoyed my Tofurky sandwich, but could barely taste the Tofurky.
3 very thin slices doesn’t amount to much taste or texture, but I <3 it anyway. hehe
I see the sun peeking out, I might go for a walk outside today. I gave myself a nasty blister on the bottom of my foot doing my obstacle course yesterday.
It feels better today, but I should probably stick to something easier on the tootsies, like recumbent bike. I need more equipment, like a row machine! That would be awesome, and our anniversary is next week. Nothing says romance like a sweat generator. hahaha
