Are there many things better to make with blueberries than blueberry pancakes? I don’t think so.
Homemade iced mocha on the side
Obviously I hated it…
- 2 servings Kodiak Cakes (260 cal) with 1/2 cup fresh blueberries (30 cal) added in after mixing, cooked in a nonstick pancake with 1 TBSP butter (100 cal) and drizzled with 1 TBSP Fifty50 fructose maple flavored syrup
- 1 cup cold coffee (10 cal) with 16g Nesquik chocolate powder (60 cal) and about 1 cup ice mixed in my Vita-Mix
Calories: 480, 390 just for the pancake
I decided to do just one giant pancake. It was awesome! Guys, use butter to make your pancakes. Extra calories, yes, but the flavor is so much better than cooking spray. Totally worth it. YUM! The iced mocha was very good, too. I was hoping the texture would be thicker, but I guess I didn’t use enough ice. Definitely something to grow on, though.
Sunday dinner menu: Grilled mushroom Swiss turkey burgers with red skin mashed potatoes and steamed asparagus
- A 4oz grilled turkey burger (120 cal) on a Pepperidge Farms roll (120 cal) with 1 slice Sargento reduced fat Swiss cheese (60 cal) and no salt added canned mushrooms and red onion sauteed in EVOO, with black pepper, Mr. Spice salt free garlic steak sauce, and worcestershire sauce
- About 1/2 cup skin-on mashed potatoes made with milk and butter (~200 cal)
- Steamed asparagus (~30 cal)
Calories: ~610
Deeeeeeeeeelicious!! Mushroom + Swiss are some of my favorite burger toppings. SO good. I was going to make grilled pizza, but this popped into my head in the morning, and so dinner was transformed.
Question: What are your favorite burger toppings? Any burger; beef, turkey, veggie, salmon, etc.
