That mock potato salad is brilliant! I've heard of people replacing mashed potatoes with cauliflower, but I never thought to use it in a potato salad. I can definitely see myself making that. I *love* potato salad.

I'm the same way with fancy electronics and toys. My laptop computer arrived yesterday and I will not go near it. x) I'm so scared of breaking it. My fella has to use to for the next few days (he broke his own laptop) so maybe I'll be less afraid of it when he returns it to me. Hah.

I'm glad the raw diet got you more in touch with your cravings and intuition. Despite how miserable that week was for you, it sounds like you came away from it with a better insight as to how your body works. =)

Glad to hear your transition back is going well!

I think its way too hard to eat raw 100% all the time. I don't know how some people do it. I think a diet where the two are combined sounds ideal :)

Pretty interesting that you did that raw diet experiment, Jenn! It was neat to see it in practice, done by someone who isn't an expert or a raw fanatic. Like you, I need raw and cooked foods in my life -- I usually have a big salad at lunch time, and then a small salad with my cooked dinner.

Also, I totally feel you on the added sodium in everything. Eden Foods canned beans are a godsend -- low sodium and cooked with kombu for improved digestion, plus no sketchy BPAs in the can linings either. I've also found that while flour tortillas generally have a ton of sodium, corn tortillas almost never do.
