Stacking Cheese

Sometimes yellow is my favorite color. This is especially true when we’re discussing precious metals or at ShopRite when I spot bright yellow Manager’s Special stickers on my favorite items.

Look what I found yesterday: Kerrygold cheese 50% off!!

$2.50?! Sold! Quicker than they imagined, I suspect.

Of course I did what any savvy investor would do: I stacked my reduced-price cheese. I don’t know why they were on sale, nor do I care. Rolling on the floor laughing

You might think for the cheese to be reduced that much that it expired like last week, right? Not so!

They’re not set to expire until October, November, and as late as December!!

Pretty sure they’ll be eaten long before those dates, anyway.

I tried the Swiss in an antipasto + leafy greens salad. It was incredible! So creamy and delicious. YUM!

  • Mixed leafy greens
  • Kosher dill pickles
  • 3 beet slices
  • Olives + rogue hot pepper from olive bar
  • Lindsay low sodium black olives
  • Antipasto salad from deli counter (ham, salami, celery, other random stuff)
  • Kerrygold Swiss cheese
  • Drizzled with EVOO + red wine vinegar

Mmmm… salty salad. This bowl contains almost everything I’m supposed to be avoiding, LOL. Eye rolling smile

I’m so glad that you guys liked my Peeps S’mores! They’re all kinds of awesome, right? Open-mouthed smile I have more Easter recipes to come. It’s been a busy week!

Today, I’m working on my blog, then I might go to Middletown to do a bit of shopping. We’re going to my little cousin, Mandi’s, party tomorrow, so I should probably go today, but then again, it’s still a bit too soon to buy fresh produce for Easter, so maybe I’ll wait until Saturday, which doesn’t sound appealing, lol. Shopping the day before a holiday is crazy and definitely a habit I am trying to break. So hard when you live out in the boonies and gas is $4+/gallon and expected to be $5/gallon by Memorial Day weekend. Please prepare, my friends!

Thank you! I have a Canon Rebel xsi and shoot almost exclusively with my 50 mm lens, though, I have the stock zoom lens and a 35 mm lens that I switch up once in awhile. :)
