Summer Sandwich Series: Hummus and Veggie

Welcome to my new summer sandwich series (that will probably last long beyond summertime, hehe)!!

I’ve mentioned once or twice how I can’t get enough veggie and hummus sandwiches this summer and I’m happy to say that it wasn’t a short-lived phase. I’m still diggin’ the combo and making excellent use of the homemade hummus I made a few weeks ago.

Hummus and Veggie Sandwich
(vegan)

  • Poppy seed roll drizzled with red wine vinegar + extra virgin olive oil
  • About 1/3 cup homemade hummus
  • 2 dill pickle sandwich stackers
  • Handful of fresh baby spinach
  • Plum tomato sprinkled with Himalayan pink salt and black pepper

Totally amazing combo. I highly recommend the red wine vinegar + EVOO. It lends great flavor to the whole sandwich. Yum.

I have a hair appointment tomorrow and it’s 2:12AM, I should be sleeping! Such a rebel. Punk

Those look so yummy Jenn – I love adding spinach to things instead of lettuce :-) I have yet to try hummus on a sammy – must.try.

What an ingeniuous idea the vinegar and EVOO is. Sounds delicious, it’s very unique, how did you come up with that combo?

Red wine vinegar and EVOO is one of my favorite flavor combos, especially on salad, but I’ve also used it on sandwiches as long as I can remember! Must stem from Italian sandwiches and crusty Italian bread my father used to buy from the bakery and douse with vinegar. It’s so good. :)

when i think about it, i always put tomato and spinach in my sandwiches when i use hummus as a spread- but i think its just because the combination goes so well together! mmm and having a bagel sandwich makes it so much better!
