Energy Challenged

by J3nn (Jenn's Menu and Lifestyle Blog) on April 18, 2011

Would you believe I accidentally woke up 2 hours early today and didn’t realize it until it was too late? It’s true. You guys know how Dustin and I keep crazy hours—well, if you didn’t, you know now!—and we happen to be on an early-to-bed, early-to-rise schedule. And by early I mean in bed by 7:00pm and up by 3:00am. It won’t last, we go through cycles. Anyway, I woke up at what I thought was 2:49am. Then, I thought somehow our alarm clock was an hour slow because my computer clock said it was 1:00-something. It didn’t register with me at that moment—sleep deprived, obviously—so, I went downstairs to make Dustin breakfast and thought it was quite odd that the clock downstairs was even slower than my computer clock. WTF? Ah, whatever. It still wasn’t registering as I don’t really pay too much attention to clocks as they are often unneeded in my day-to-day life. I figured I must have looked at one or the wrong. It wasn’t until I was talking to Dustin about how slow the day is going that it struck me: I woke up at 12:49am!!! I guess something on Dustin’s nightstand was blocking the one, LOL. Dustin said he found it strange that I was waking up so early, but he doesn’t say anything until later on??? haha No wonder why I am sooo tired. I barely slept 5 hours. Yet when I woke up, I felt refreshed. Physically, anyway. My mind was obviously still somewhere in La la land.

Probably wasn’t the best day to do an 18-hour intermittent fast, huh! But I did it and I feel good. Well, I’m tired, but I’m glad I did the fast. I felt bloaties all weekend. Yuck.

I was pretty hungry from the time I woke up. My body was probably searching for some form of energy being I didn’t get adequate rest. Oops! Lunch (supper?) was worth the wait. I had a leftover meatloaf muffin, a small scoop of leftover salmon orzo salad – about 1/4 cup, 10-12 Lindsay low sodium black olives, and a glorious beet, chickpea, and goat cheese salad.

  • Bed of mixed leafy greens + shredded carrots
  • Sliced no salt added beets
  • Chickpeas
  • Goat cheese

I drizzled the salad with extra virgin olive oil, red wine vinegar, balsamic vinegar and about a tablespoon of Bolthouse Farms yogurt blue cheese dressing. It was fabulous! But too much. I was full from the other sampling plate, plus one ounce ciabatta bread, so I only ate about half of the salad. My eyes were clearly bigger than my stomach for a little while, lol. I don't know smile

Cherry Almond Salad

I love recreating foods that I have at restaurants or purchased at the store. And sometimes, I even make them healthier. Like a salad with Panera Bread’s Orchard Harvest salad in mind. Or an unattractive, but tasty low-carb turkey burger Big Mac® imitation on a grain-free sesame seed bun with baked butternut squash fries. And when [...]

Muffins with An Identity Crisis

March 17, 2011 Intermittent Fasting

What’s the difference between a muffin and a cupcake? Flour… sugar… eggs… butter…? Check, check, check, and check. Hmm… Well, for one, muffins aren’t dressed in cute little paper wrappers… or are they? Nor do they sit smugly atop a cupcake plate, as if they belong there. And muffins certainly do not have a sugary [...]

Some Say Stinky

March 9, 2011 Intermittent Fasting

But I say deeeeeeeelicious!! When I smell the scent of brussels sprouts roasting in the oven, I don’t plug my nose, just the opposite: I inhale as much of the aroma as possible. Roasted brussels sprouts are one of my favorite veggies!! Are you a fan?? My greediness surfaces when these are in the kitchen. [...]

How Very Cherry {Cherry Almond Salad}

March 8, 2011 Intermittent Fasting

Remember when we had lunch at Panera Bread a few months ago? Well, I do. I never forget a flavor that I like. I really liked the cherry-flavored dressing on their Orchard Harvest salad; it was a great combination of sweet and sour that complemented everything else. It took some searching, but I finally located [...]

Gran ensalada grande del Taco

March 1, 2011 Intermittent Fasting

Great big taco salad for the uninitiated!!! Kelsey inspired me to make one after I saw her delicious tempeh taco bowl yesterday. I brushed a La Tortilla Factory tortilla (100 cal) with 1 teaspoon extra virgin avocado oil (40 cal), then placed it in a baking dish to make a taco bowl shape and popped [...]

Great Grapes and Sandwiches

February 24, 2011 Intermittent Fasting

Dustin had a doctor appointment on Tuesday, so after the office visit we stopped at Shop Rite and Trading Post for a few things. And by few I mean about 20. I was fairly disciplined in the stores considering I was still fasting, I’m sure it could have been worse. When we got home, I [...]

Better with Cheddar

February 23, 2011 Intermittent Fasting

I’ve had cornbread on my to-make list for a long time, so on Monday it finally came to be. I made Ina Garten’s Cheddar Dill Cornbread with 2% cheddar, minus the dill, and I cut down on the ingredients by 2/3 in an attempt to only make 4 muffins, but ended up making 6 anyway. [...]

Wind, Water, and Sunlight

February 21, 2011 Intermittent Fasting

It was SOOO windy this weekend!! Our house was shaking and my grandmother and cousin lost power, but we didn’t, thankfully. Something had Mother Nature in an uproar! Our water has been FILTHY on and off for a couple of months now, ever since the water department has been working on something—who knows what. We [...]

It’s Hip to Eat Square

February 19, 2011 Intermittent Fasting

My cousin decided that she was going to stay in last night, so Dustin and I were on our own for dinner. I had to go to the craft store anyway, so we stopped for dinner at Union Square Restaurant in Newburgh. They have an eclectic menu with a little of everything, including brick oven [...]
