I’m not one of those people who needs coffee immediately upon waking up—like my mom does–I never formed the habit. I love the flavor of coffee, but I’d say 9 times out of 10 I prefer to drink it cold with lots of sugar and milk. If it’s coffee-flavored ice cream, even better. But a tall glass of dairy doesn’t always agree with my tummy and I think I can probably do without a few tablespoons teaspoons of sugar in coffee.
So, I did some lab kitchen experiments to find a solution. Ok, I only did one. That’s all I needed to do!
24oz Super Sweet Iced Coffee
(sugar-free, dairy-free, gluten-free)
Ingredients:
- 8oz strong coffee (~2 cal)
- 5oz unsweetened vanilla almond milk (25 cal)
- 3 half-droppers of vanilla NuNaturals liquid stevia extract or to taste
- ~1 cup ice cubes
Mix coffee with stevia extract and almond milk in 24oz cup. Fill to top with ice cubes; stir again.
It’s so delicious! I’ve been limiting myself to just one 24oz cup a day, but I think I could easily throw back 3 or 4, lol. If you don’t like your coffee super sweet, use much less stevia extract.
