I needed to replace the battery in my food scale this morning and recharge my camera’s battery. Luckily I got through breakfast with the low-battery warnings. My Canon Rebel is REALLY good at holding a charge. I only recharge it every 4-8 weeks, even though I take 100-300 pictures a day! :shock: Pretty snazzy. :)

Breakfast was absolutely phenomenal. Spinach, mushroom, and Laughing Cow light cheese omelet with Food for Life Genesis 1:29 toast and a Granny Smith apple:

I’m not much of a coffee or tea drinker, just iced water for me!

It came out soooo fluffy!! Cholula was on standby. :twisted: I used several drops on my omelet… Mmmm!

  • I scrambled 1 large cage free egg (75 cal) and 1/4 cup liquid egg whites (30 cal) together while I sauteed a handful of fresh baby spinach (10 cal) and 1 sliced mushroom (8 cal) in 1 teaspoon EVOO (40 cal) in a nonstick pan. When the spinach was wilted down, I poured the egg over it and immediately added the Laughing Cow light Swiss cheese wedge (50 cal) in and let it cook until it was lightly browned on the bottom, then I flipped it over, covered the pan with foil and shut the heat off. I let it sit there for about 5 minutes before plating it.
  • 2 slices Food for Life Genesis 1:29 bread (160 cal) lightly toasted and buttered (100 cal) with 1 TBSP butter shared between both slices.
  • 3/4 of a medium-ish Granny Smith apple (~60 cal)

Calories: ~533, 213 just for the omelet

Best omelet I have had in a long time!! Very, very tasty and filling. The creamy Laughing Cow cheese in the center was heavenly. I highly recommend trying it in an omelet if you haven’t already. YUM! :)

Today is supposed to be 91F degrees! 8-) Aaaah, noooooo!! I hate heat. :( I’m going to workout before it gets too hot. Be back after lunch or whatever snack/meal comes first. :D
