Bloggers Beware: Say NO to Internet Censorship! PIPA/SOPA

by J3nn (Jenn's Menu and Lifestyle Blog) on January 18, 2012

Google:

Millions of Americans oppose SOPA and PIPA because these bills would censor the Internet and slow economic growth in the U.S.

Two bills before Congress, known as the Protect IP Act (PIPA) in the Senate and the Stop Online Piracy Act (SOPA) in the House, would censor the Web and impose harmful regulations on American business. Millions of Internet users and entrepreneurs already oppose SOPA and PIPA.

The Senate will begin voting on January 24th. Please let them know how you feel. Sign this petition urging Congress to vote NO on PIPA and SOPA before it is too late.

Bloggers: Be on alert! This affects you, your blog readers, and anyone that uses the Internet in the US. Censorship is a terrible, terrible thing. Regardless of the good intentions that might be somewhere in these bills, they would inevitably have unintended consequences and set frightening precedence for future censorship and government interference. Do not allow Congress to pass these bills! Remember: They work for us, not the other way around.

PIPA/SOPA are bad for business, bad for the economy, bad for bloggers, bad for Internet users, and bad for America. Keep the Internet a free and uncensored environment. We do not need censorship and more tyrannical laws and regulations, and we blog writers and Internet businesses certainly do not need to be the Internet police!

We’re not alone, Internet lovers. Mega sites like Google, Wikipedia, Reddit, and Mozilla are standing in solidarity against this government overreach writes CBSNews.

j3nn says NO to c3nsorship! Thumbs down I encourage you to send this message to every blogger you know. Tweet this post, share and like it on Facebook, Stumble it, Pin it—Help get awareness out there!

Say YES to gluten- and dairy-free banana chocolate chip bread!

banana_bread_3x600

banana_bread_1

I had a few overripe pitiful bananas that I didn’t want to throw away—again. The baking bug bit me, so I decided to turn almost-inedible bananas into TOTALLY edible banana bread—minus the gluten and dairy. I have a bunch of gluten-free, soy-free Enjoy Life dairy-free chocolate chips in the baking bin, so I decided to skip the dairy, which I’m trying to cut down on anyway. Heads up: Enjoy Life chocolate chips taste just like milk chocolate! Enjoyable, indeed. Smile

I made this recipe up as I went along, I kid you not. It turned out spongy and chocolaty and pretty gosh darn good considering I winged it like I was auditioning for a Redbull commercial.

If you like dense, doughy, and dairy-free, this bread is for you.

Gluten-free Banana Bread with Dairy-free Chocolate Chips

Ingredients:

  • .5 cup white rice flour, sifted
  • .5 cup tapioca flour, sifted
  • .5 coconut flour, sifted
  • 2 TBSP cup flaxseed meal
  • 4 very ripe medium bananas, mashed (lumps ok)
  • .25 cup sugar
  • 2 TBSP coconut nectar OR honey OR maple syrup OR omit
  • 4 large eggs
  • .5 cup water
  • 1/3 cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon xanthan gum
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon cinnamon
  • .5 cup dairy-free chocolate chips, plus .25 cup more to sprinkle on top
  • 1 TBSP oil for greasing pan OR use parchment liner

Method:

  1. Preheat oven to 350 degrees F; grease or line loaf pan
  2. Sift all dry ingredients together
  3. Beat eggs in separate bowl; add to dry ingredients along with mashed bananas, coconut oil, water, and all other wet ingredients.
  4. Mix together well until thick, doughy batter forms; add in .5 cup chocolate chips and mix.
  5. Pour batter into loaf pan and sprinkle top with remaining chocolate chips.
  6. Bake on 350 degrees F for 45-50 minutes or until golden brown and toothpick comes out clean in center.

Note: Don’t be alarmed when it drops after resting. It will come out of the oven higher than it will stay—unless you’re very lucky. Smile

Makes 8-12 slices

In other eats…

Crudely constructed shrimp lettuce wraps, because I’m still on a lettuce wrap kick and do not discriminate against unsightly food in the least. It’s still fuh-reakin’ delicious no matter how unattractive it may look. Winking smile (I think it looks gorgeous)

I do take nice pictures sometimes, I promise. In fact, Shelley at Yummly.com emailed me the other day to confirm that I do indeed take nice pictures when she said I had been Certified Yummly!! Open-mouthed smile

That is certifiably awesome. I love being Yummly. hehe

I also love sleep, which I think I’ll indulge myself in.

Remember kids: SAY NO TO INTERNET CENSORSHIP! Baring teeth smile

Reject tyranny.

I own me!

Lettuce Be BFFs

One of the healthiest habits I picked up this year stemmed from Disney World—Epcot, to be exact. What healthful habit could I have possibly have picked up at the sugariest happiest place on Earth? Lettuce wraps! I can’t seem to get enough of them ever since having this one that blissful day at Epcot. Of [...]

Almost a year later, I finally opened the spiralizer that Dustin bought me for Valentine’s Day! It’s even better than I imagined it would be. Look what it makes: Zucchini spaghetti! So much fun. I’m back on my 3-day lower carb menu after 3.5 days of carby indulgences. Low-carb Zucchini Spaghetti Carbonara (gluten-free, grain-free, low-carb) [...]

My favorite type of food in the whole world is a sandwich. It’s also my favorite food to prepare. I feel like I’m building a holy temple when I construct one. I don’t like sloppy sandwiches, I prefer them to be uniform and layered accordingly. Things get real up in the kitchen when the bread [...]

I went to my doctor’s appointment for my sinus woes yesterday. She agreed that I need something beyond my home remedies, but did give me the OK to take Mucinex-D, too. The blood pressure medicine prescription seems to be working; my reading yesterday was 126/78 down from 142/92 last time. She sent a RX for [...]
