Last night’s Mexican themed dinner party was a success. Everything turned out muy delicioso!
Cherry limeade is one of my favorite fruity drink combinations. I bought this bottle of 100% cherry juice at Mother Earth’s awhile ago and thought last night’s dinner would be a good time to enjoy it.
I mixed the whole bottle with the juice from 3 limes and about 2 cups of water. It was a little on the tart side, but tasty and refreshing!

Store-bought guacamole. I was going to make fresh guac, but I was worried that the avocados I just bought at Shop Rite weren’t ripe enough.
This was still delish, though.
Homemade salsa made with: roasted jalapeno peppers, roasted onions, roasted garlic, 2 cans (drained) no salt added diced canned tomatoes, and AlsoSalt, then gently whirled in the Vita-Mix. That machine is so powerful, it’s hard to not over-blend!
Rice and beans
There was chicken that was cooked to perfect tenderness in my crock pot with a little chicken broth that I somehow didn’t optimize a picture of for a post. Oh, and fresh veggies; romaine lettuce, avocado, tomatoes, etc., plus sour cream.
The carrot cake turned out AWESOMELY! It was nut-free and doughy, just the way Tricia and I like it.

I had a small piece, I was full from 2 tacos stuffed with greatness.
We had a lovely time with my cousin. She’s a lot of fun to talk to, hope she comes for dinner again soon!!
Today is Dustin’s birthday, but he’s still asleep, LOL. So we haven’t even started that celebration yet! My mom is working on a cheesecake recipe from Romper over @ LB — Thanks, Romp! <3 Lots of Dustin's birthday pics to come later. I have to get going!
