Hot and Humid With a Chance of Happy Taste Buds

Summer is definitely here! I wasn’t convinced just yet based on last week’s cold front, but I changed my mind yesterday when I checked the temperature and it said 87F degrees, feels like 90F degrees. 8-) We’ve been staying cool in the house, so it hasn’t been too bad. I’ve mainly been subsisting off of ice pops (not the healthy kind!) and sandwiches on Nature’s Pride Bread for the past few days. My spirits haven’t been up to cooking elaborate meals, then the heat has been another major deterrent. No big deal, I don’t feel the need to cook every single day. :)

We’ve really been enjoying all of these Nature’s Pride breads that I got as a free sample. I wasn’t sure what to do with the long, country white rolls, but then I remembered the Tofurky Beer Brats that have been in the fridge for a long time. Perfect.

Vegan beer brats with peppers + onions and a semi-loaded boiled red ‘tater on the side.

I doused my potato in Cholula hot sauce :twisted:

The Tofurky beer brats are very high in sodium (620mg per link) and 260 calories, so I had just half of one to cut down on the sodium a bit.

  • 1/2 of a Tofurky beer brat (vegan, 130 cal) on a Nature’s Pride long white roll (200 cal) with no salt added mustard, and bell peppers and onions sauteed in EVOO
  • 1 medium-ish boiled red potato (~120 cal) with a big glob of Fage Total 0% plain Greek yogurt (~35 cal) and 1 slice Lightlife tempeh Fakin’ Bacon (33 cal)

Calories: ~608

I enjoyed this with a can of diet cream soda. Yum! The Tofurky beer brats were soooo good!! They probably would have been better if I had grilled them, but I didn’t feel like firing up the grill for 4 little links. The roll was delish too, but it split in two because it was a little on the dry side. It still worked out well, though. :)

Yesterday on Father’s Day, Dustin called his dad and then we went to the cemetery to visit my father’s grave. I wished we lived closer so I could plant some flowers, but they’d die if we didn’t get to water them often enough. :( Then, we went to the Eveready Diner in Hyde Park for dinner. I had the lobster ravioli, which came with an unremarkable side salad dressed in homemade vinaigrette:

Sunday just isn’t Sunday without some kind of pasta dish, lol. The lobster ravioli was fabulous! They were very generous with the lobster meat stuffing, I ate all of it. Yum to the power of 10. :D

I typically don’t love Walmart, but there’s not many stores open past 6:00PM on Sundays and we needed some household items–why is that?! This isn’t 1876 anymore! I digress. Frozen veggies are one of the few foods I’d buy from Walmart, so I got a few bags of those and then spotted a loaf of Arnold “sandwich thins” at the end of the same aisle, so I picked up a pack because they were rectangular and loooooooooong, made with 100% whole wheat, and only 100 calories. Now, these do contain Splenda, but I’m not a purist, and for 100 calories I’d be hard-pressed to duplicate such goodness in 90 degree weather. Ya dig? ;)

I couldn’t wait to have one, so I ate one for breakfast this morning with a WHOLE can of tuna. I love tuna. <3

White nectarine on the side — why are white ones more expensive than regular ones?! That’s racist! :lol:

  • 1 Arnold’s 100% whole wheat sandwich thin (100 cal) stuffed with ~4oz very low sodium tuna (140 cal) mixed with 2 TBSP Hellmann’s olive oil mayo (100 cal)
  • 1 medium white nectarine (~60 cal)

Calories: ~400

These sandwich thins are AWESOME! They hold a LOT of stuffing and they’re very soft and flexible. Love them! I’ll buy them again despite the artificial sweetener, which I’m hoping they’ll nix in the future. :D

Time to go visit some blogs! I have sooo much to catch up on, I’m completely out of the loop. :( Ah well, what can ya do? hehe

You Say Tomato

I say tomato, too!! :) One of my favorite summery sandwiches is tomato and cheese. I find myself eating it in the dead of winter, too, but it really is best in the summer when tomatoes are in season. Unfortunately, tomatoes aren’t in season here in NY, but let’s pretend they are. ;)

While Dustin was at the doctor’s office, I had lunch with the kitties. Well, they were sunbathing on the floor, but at least they kept me company, lol. I made a fabulous little tomato + cheese sandwich on Alvarado Street Bakery flax seed bread:

Carrot sticks + Barney Butter + Snyder’s unsalted mini pretzels on the side

  • 2 slices Alvarado Street Bakery flax seed bread (100 cal) with 2 slices Sargento reduced fat Swiss cheese (120 cal), 2 tomato slices (15 cal), and 1 TBSP Hellmann’s olive oil mayo (50 cal)
  • 1 carrot (20 cal), 1 TBSP Barney Butter (90 cal) and 14g Snyder’s unsalted mini pretzels (55 cal)

Calories: 450, 285 just for the sandwich

‘Twas delish! Took just a few minutes to make and it was nice and light.

It’s a gorgeous day outside. I’m going to workout and then drag Dustin to the store with me this evening. I have to pick up ingredients for tomorrow night’s dinner, plus make a carrot cake, and possibly a vanilla bean cheesecake for Dustin’s birthday. :shock: My baking skills aren’t that great, so this is going to be a challenge.

Does anyone have an awesome carrot cake recipe and/or a vanilla bean cheesecake recipe? I’d rather have word of mouth experience than a random recipe online. Help! :lol:

When Life Throws You Lemons

…make limeade! I wanted to try out NuNaturals NuStevia in lemonade but it ended up being lime juice! :roll: We have 2 bottles of lemon and lime juice in the fridge in unmarked green bottles that they come in and I don’t know which is which. I tasted a drop and thought it was the lemon, but I guess not. :? I don’t like straight lime in large doses, I prefer it to be mixed with lemon, cherry, or avocado. :P

Despite it being the wrong juice, the sweetener was right on! No bitter aftertaste, just like it claims. I used 1.5oz lime juice (15 cal) and 1 packet NuNaturals Nustevia sweetener (0 cal) and 8oz water. I’m looking forward to the lemon version, lol.

I threw together a quick sandwich for lunch: Tuna (tempeh)BLT and avocado oil potato chips

  • 2 slices Alvarado Street Bakery sprouted grain flax seed bread (100 cal) with romaine lettuce (5 cal), plum tomato (15 cal), 1 strip tempeh Fakin’ Bacon (35 cal), and 2oz low sodium albacore tuna (60 cal) mixed with 1 TBSP Hellmann’s olive oil mayo (50 cal)
  • 1oz Good Health Natural Foods avocado oil potato chips (140 cal)

Calories: 405, 265 just for the tuna TBLT sandwich

The sandwich was tunalicious with a hint of smoky fake bacon, and the avocado oil chips were great, too. :) My belly is satisfied, so now I shall go get ready to go out into the human jungle and do some shopping. We’re going out to dinner. My vote is for sushi! We’ll see what happens between now and then. Be back later!
