A Beautiful Bunch of Ripe Tomatoes

by J3nn (Jenn's Menu and Lifestyle Blog) on August 11, 2010

I love colorful fruits + veggies!

I especially love said beautiful tomatoes in a bountiful salad paired with grilled, trim London broil…

I’ve had a bottle of Mr. Spice salt free (sodium free) steak sauce hidden in the cabinet for the longest time, and when we were reunited, I was inspired to grill some tasty, lean beef. Mr. Spice salt free steak sauce tastes just like A-1 steak sauce, minus the sodium and other funky ingredients. It’s fabulous! They have a whole line of sauces that I really need to stock up on again! I liked all the flavors I have tried, wish my local store would carry more than just the steak sauce. :(

<3 big salads <3

This time my gigantic salad was nestled in a serving bowl. Big enough for several people, but designed all for ME! I ate all of it, along with thinly sliced pieces of grilled London broil. Delish.

We went to Mother Earth’s on Saturday; I didn’t get much volume-wise, but I got some pricey items like Navitas flax seed powder and smoked paprika ($26.99/lb!!) –all good investments, though. I picked up a package of low sodium muesli breakfast pitas with raisins. SO tasty!! I’ve eaten them plain since bringing them home, but yesterday I decided to use one as the base for a tuna melt:

Gala apple with a blob of Barney Butter on the side

I made tuna salad with: 2 cans Bumble Bee very low sodium tuna, 1/4 cup Fage Total 0% plain Greek strained yogurt, carrots, red onion, no salt added bread & Butter pickles, black pepper, AlsoSalt salt alternative, and 1 teaspoon EVOO. I put about 1/3 of it on a pita (170 cal), then topped it with 1/2 oz reduced fat/sodium cheddar cheese (45 cal) and popped it in the oven to melt for a few minutes. It was YUMMY! However, the yogurt didn’t really do anything for it. I decided to use it as a mayo substitute to cut down on the sodium content, but it was dry, as if it was just plain tuna. That’s ok, though. It still tasted really good! I’m not super fussy. :D

Question: Do you like no or reduced sodium versions of your usual favorites? e.g., tuna, cheese, bread, condiments, etc.

Better Than A Restaurant

Pardon me while I toot my own horn: my lunch salad was better than what you will get at most restaurants! In fact, I should open a restaurant that sells nothing but salads because I have mad veggie compilation skills, yo! Picture it… Jenn’s Salad Hut — would you patronize it? LOL I would!! London [...]

Quatro y Cinco de Mayo

May 6, 2010 Holidays

Warning: Long post ahead! Quatro de mayo I found this Valio lactose free milk at Shop Rite when I was label comparing, which is something I usually do with just about everything. It usually pays off, too. It piqued my interested when I saw that it had 11g of protein per cup, instead of 8g [...]
