Lazy To Overambitious

I put off doing a blog update all weekend because I didn’t want to get the images off of my mom’s memory card, lol. I brought her camera to the restaurant we went to with my cousin Tricia last Friday, it’s so much easier to use a small point and shoot cam than my DSLR. The restaurant was in a nice location on the river, but the food was unremarkable. Probably why I haven’t been too excited to transfer the images, lol.

I’m happy to report that I haven’t gained back any of the weight I lost while eating a semi-raw diet! When Aunt Flo was around I did gain 2 lbs, but they came back off when she headed out of town. Glad she took her baggage with her!! :D And that’s even after overindulging in sodium this weekend — deli sandwiches, my weakness. So when Monday morning came around, I decided to continue this positive downward trend and set out for a long, long walk. But first: breakfast!

I had a container of Fage Total 0% Greek strained yogurt with just about .50-.75 serving left in it, so I took advantage of not needing to dirty a dish and piled on some tasty toppings. No fuss, no muss!

I defrosted an Udi’s gluten-free blueberry muffin (240 cal) the night before…

… WOW! :o Cannot believe these are gluten free! They taste SO amazing! They’re moist, chewy, soft, and absolutely delicious. You can’t tell that they’re gluten-free, they’re THAT good. Udi’s, you rock! If I ever go gluten free, take stock out in Udi’s, my friends! LOL :mrgreen:

With a full belly, I headed outside to walk with my mom on her favorite road trail. This is where I got overambitious. We walked for just over 1.5 hours, and it damn near killed me, lol. :oops: It wasn’t just a leisurely sidewalk stroll, it was a very hilly path where eventually you hit a patch of mud and rocks — no pavement, minimum maintenance road — I wasn’t ready for such an ambitious climb. I thought it would be a breeze, but it was tough. We covered 4-6 miles, I’m not sure exactly. I tried to figure it out on mapmyrun.com but the road names weren’t matching up for some reason. My mom walks around our 1400-acre subdivision on an almost-daily basis, so she’s used to it and stayed about 1/4 mile ahead of me the entire time, lol. And she had my drink in her nap sack, Thanks Mom!! :roll: She kept turning around to make sure I was behind her, but apparently my flailing arms weren’t a good enough indication that I was thirsty, LOL. I was so sore when we got home, and even more so the next day. Even my shoulders hurt. What the heck? It was a brutal walk. I’ll have to do it a few more times to adjust, but it’s definitely not easy. I’ll master it, though. :)

After a much-needed shower and some rest, I was starved for dinner (skipped right over lunch). Turkey or salmon burgers always sound so good to me after a challenging workout, so I kept it simple and made Market Pantry turkey burgers on the George Foreman grill:

Along with a bountiful side salad with lots of Melissa’s steamed beets + Lindsay low sodium black olives. Yum! <3 salad <3

  • One Market Pantry turkey burger (140 cal) on a Food for Life sprouted wheat bun (150 cal) with 1 slice Sargento reduced fat Swiss cheese (60 cal), Heinz no salt added ketchup, no salt added mustard, and red onion
  • Side salad with a bed of romaine lettuce, a plum tomato, red onion, Lindsay low sodium black olives, Melissa’s steamed beets, cold pressed extra virgin olive oil, and lots of red wine vinegar — Cento is my favorite brand. So sour!

Fish Fest

Dustin’s been so busy programming that he hasn’t had time to go anywhere with me. :( So, I went to Shop Rite with mom this evening and picked up a special dinner for him: snow crab legs. Meanwhile, I had a nice piece of grilled Mahi mahi. Crab legs are a wee bit too salty for me when I’m trying to keep my sodium intake in check, so I settled for just one bite of his and a very nice fish dinner of my own. Mahi mahi tastes just like chicken to me, anyone else think that? I swear if I didn’t know better, I would think that it is chicken. :shock: I <3 it, it's my second my favorite non-shellfish, salmon still has my heart. hehe Ok, maybe third... tuna is up there as well.

I topped it with some Bubbie Jeanne’s all purpose cooking sauce that I picked up at Mother Earth’s last Friday…

It actually reminded me a lot of Trader Joe’s no salt added fire roasted salsa, minus the jalapenos. It was tasty, but not something I’d spend $7+ on again. I think I had higher expectations when I spotted it in the store, lol.

Big piece ‘O mahi mahi :shock: I ate it all, too! :P I also ate almost a whole bunch of grilled asparagus. :oops: Told you, I’m greedy with the greens, lol.

  • Grilled mahi mahi fillet topped with Bubbie Jeanne’s all purpose cooking sauce
  • Small boiled red potato topped with Chobani 0% fat plain Greek strained yogurt
  • Grilled asparagus with EVOO + fig infused white balsamic vinegar

Calories: 500-600

Delicious. Honestly, I was feeling full halfway through, but finished my plate anyway. I only had about 300 calories from a sandwich + plum earlier, and it’s definitely not good to under-eat when my body is trying to recover from that brutal walk. I’m not being dramatic, I swear. :P I’ll probably have another small meal before I go to sleep. I’m going to tackle that hilly walk again tomorrow, so I better not P.O. my body in the meantime, lol.

I’m going to relax now, maybe load some new songs onto my iPod.

Overnight PB&J

No time for breakfast? Nonsense! I made a PB&J sandwich last night–which took all of 3 minutes–and had a yummy breakfast this morning.

  • 2 slices Genesis 1:29 sprouted grain bread (160 cal) with 2 TBSP (32g) Peanut Butter & Co. Mighty Maple peanut butter (180 cal) and 2 TBSP Polaner All Fruit grape fruit spread (80 cal)
  • 1 cup Valio lactose free nonfat milk (80 cal)

Calories: 500, 420 just for the sandwich

Deeeeelish! I love how the fruit spread soaked into the bread. I purposely used 2 servings of it because just one tends to be a little on the dry side. Oh, and, I made it while the bread was still frozen and it defrosted perfectly. Not soggy at all! :)

Breakfast was well planned, but dinner was a mystery. I didn’t know what to make, and I wasn’t in the mood for anything specific. So, I decided to take some salmon out of the freezer, and thought I might as well take out some mahi mahi while I’m at it. While the fish was defrosting, I was inspired by a shiny Granny Smith apple in the fruit basket. I thought it would go great in a salad with some cheddar cheese. Very Autumn-ish, but this weather feels like it is the fall, so it seemed right.

I just used Polaner All Fruit apricot fruit spread on top of the fish. It’s really great as a quick sauce.

Fake baked beans are super simple. This time I used 2 cans beans; 1 Eden organic pinto no salt added beans and 1 Eden organic no salt added northern navy beans. Then I mixed them with 6 TBSP Hick Lickin’ Good BBQ sauce and nuked them for 4 minutes.

I made a quick salad dressing in my Vita-Mix with a head of roasted garlic, 2 TBSP EVOO, 2 TBSP Bragg apple cider vinegar and 1/4 cup red wine vinegar. Then I tossed 1 bag of mixed leafy greens and 1 sliced Granny Smith apple with the dressing and topped it with reduced fat/sodium cheddar cheese.

Everything was very good! I’m so proud of Dustin for eating a completely healthy dinner without any protest. :D

I’ve been very stressed out and sad all day. :( I’m worried about our oldest kitty, Gingerbread. About 2 weeks ago we noticed that his hair was falling out and he was scratching excessively. So, we brought him to the vet. We were relieved to hear that it was an allergic reaction, possibly to pollen, and not something worse. The vet prescribed prednisone and his scratching stopped right away, and his hair is coming back in. But now, he stopped eating and slept in our closest for 14 hours straight last night, which is very unlike him. He threw up twice the day before, which isn’t unusual for him. He’s always hacking up all sorts of presents for us. He’s snubbing his treats and he’s not eating anything. He’s going to be 10 in July, so I’m really worried, especially after losing our other fur-baby just last fall. :cry: We called the vet today and they said to bring him in for some blood work first thing in the morning.

I don’t know if it’s a coincidence or if it’s related, but we had our other cat, Jack, shaved the other day because his long hair was getting very knotty and he refuses to let us comb him. Ever since he came back from the vet, Gingerbread has been acting strange, even though they sleep right next to each other. We’re wondering if Gingerbread is depressed or feeling awkward around Jack, because he’s acting like Jack is a new cat sometimes. I dunno, I just want him to be better. *sighs* We’ll see what the vet says tomorrow, I’m hoping for the best. I can use all the positive thoughts anyone has! :)

Ripe and Juicy

I think almost all the fruit I ate this week was a “now or never” sort of deal. I need to start eating it right away instead of waiting for it to be on its last leg! Although, I do like how sweet it gets when it’s very ripe, so that’s a plus. Being we’ve been so busy this week, we’ve been eating a lot of quick, simple things, including mucho leftovers.

My favorite leftover the week: Mahi Mahi <3

I threw a 3oz piece on 2 slices of the dutch oven bread I baked the other day, with some plum tomato slices and 1 TBSP Hellmann's olive oil mayo (50 cal). By the way, I didn't follow Biz's recipe exactly. I omitted the salt, so this probably isn't the best bread ever, it’s probably the second best bread ever. ;)

On the side: an awesome side salad with 1oz Vermont Creamery goat cheese (80 cal, 45mg sodium), spring mix, plum tomato, red onion, red wine vinegar and 2 TBSP Bragg healthy vinaigrette (90 cal)…

Nice even slices, huh? :lol: That was me trying to slice them as thinly as possible. I should have just used my food slicer. Too lazy to clean it though. lol

I estimate this sandwich + salad combo to be around 500-550 calories tops. Delicious.

The next day I made another version of leftover Mahi Mahi in a salad for my post-workout meal. I did 65 minutes of obstacle course, 30 minutes (8 miles) on my recumbent bike and then finished upper body strength training. I was worn out! And thirsty. When I’m thirsty fruits and veggies sound SO good to me. A fresh, crisp salad to quench your thirst and your hunger = PERFECT

A big hunk of dutch oven bread with blueberry fruit spread and a piece of VERY ripe (overripe?) pineapple on the side. I was so hungry after that extensive workout. I considered going for a walk later on, but didn’t have time.

  • Bed of spring mix (15 cal) tossed in red wine vinegar (10 cal) and 2 TBSP Bragg healthy vinaigrette (90 cal), then topped with: 1oz Vermont Creamery goat cheese (80 cal), 3.5oz Mahi Mahi (105 cal) cut into large pieces and mixed with 1 TBSP Hellmann’s olive mayo (50 cal); plum tomato, red onion and 10 Lindsay low sodium black olives (50 cal)

This was fanastic! I really enjoyed eating it. Salads are the best, the possibilities are infinite!! Despite how heavy it was in protein and fat, I got HUNGRY about 2-3 hours later. :( So I made another protein and fat-rich lunch with an avocado that was WELL past its prime. And no, I’m not on a carb-reduction kick by any means. I try to get in 80-120g of protein each day and as many healthy fats as possible. Then I let carbs and fiber fall where they may. My menu is coming back to the blog very soon, I’m just waiting for Dustin to get around to finishing the script. He had some other projects that took priority, so I’m being patient. I promise though, it’s coming back better than ever, along with weight loss updates and new tools and pages to check out. I’m still working on launching all of it, so hang tight! :)

  • 2 large cage-free eggs (150 cal) cooked over-easy with coconut cooking spray (15 cal) with 1 slice Sargento reduced fat Swiss cheese (60 cal) and a few slices of overripe avocado (30 cal) on Trader Joe’s sodium-free whole wheat bread (140 cal) and 1 TBSP Heinz no salt added ketchup (25 cal)
  • 1 big juicy orange (~100 cal)

Calories: ~520

Ooey, gooey yumminess! I love egg sandwiches, they’re so amazing and totally worth getting a pan dirty for. :D

I’ve been craving pizza like crazy this week, but I’ve been adamant about keeping my sodium intake in check, so that means no pizza parlor! :( But that’s ok, because homemade pizza can be just as wonderful and very low in sodium. I wanted to buy another pizza stone last week, but I couldn’t find one at Macy’s. Wish we had a real cooking store close by. Rural life is rough. :P

I like this new Sargento reduced sodium provolone. 70 calories per slice (19g) and 100mg sodium.

I could have gone just a little lower in sodium by using fresh mozzarella, which is generally 80mg sodium per ounce, but I had a few mg to spare for the day LOL.

Sodium-free pizza dough

  • 1/2 cup (60g) flour (210 cal)
  • 1/2 teaspoon yeast
  • 1 tsp sugar (15 cal)
  • 1 tsp extra virgin olive oil (40 cal)
  • 2 TBSP warm water

1. Combine yeast, sugar and warm water in bowl
2. In another bowl, add in the flour, then make a well in the center of it and pour in the sugar/yeast/water mixture
3. Mix together well and knead until dough ball forms
4. Coat dough ball with 1 teaspoon extra virgin olive oil
5. Cover with damp towel and let sit in warm place to rise for 3-5 hours

1 serving, 265 calories

Note: You can use whole wheat flour. I had planned to but I just grabbed whichever flour I came into contact with first being it was 4:30AM and I had just woken up a few minutes prior to deciding to create a batch of dough. lol

I preheated the oven to 500F degrees, then rolled my dough out on a baking sheet lined with nonstick foil and topped it with a little Franceso Rinaldi no salt added tomato sauce (35 cal), 19g Sargento low sodium provolone cheese (70 cal) that I shredded in the food processor and then sprinkled it with dried oregano. I popped it in the oven for about 12 minutes, I think. I lost track of time. So just keep checking it until it’s golden brown, or to the desired texture.

It was delicious! It didn’t rise as well as I hoped it would, but I’m still perfecting my baking skills. :lol: I usually use whole wheat flour and honey when I make dough, so this was different, but still great. My side salad was totally awesome, too. :)

I have to go workout now. I still feel puffy, but I lost a few pounds of water this week. Yay, except I wish I didn’t feel so stiff still. You know when your rings are tight from swollen fingers? Well, I feel like that all over. :( Pretty much sucks! lol Ah well, it will all balance out soon enough. I’m going to be extra busy over the next few days as we get ready for our trip. I have a lot of shopping to do, which just happens to burn a lot of calories. :mrgreen: Win, win!!

We were supposed to get wet snow this morning! :o SAY IT AIN’T SNOW SO!! It’s springtime, NOT allowed! lol Be back later. :)
