After drooling over the Kodiak pancakes on Kath’s blog, I was so excited when I spotted a box of it in Shop Rite the other day. It was pretty pricey, $6.00 for one box, but I loved the nutritional facts (only 216mg sodium and 130 calories per serving) and I don’t eat pancakes often, so why not, right? :)

We picked up this bottle of organic blueberry syrup at the Asian market the other day. And this is where the flapjacks flopped. :(

Instead of measuring out a portion for me and then dirtying another bowl for Dustin, I just made 3.5 servings of Kodiak pancake batter, which yielded six 4 inch-ish pancakes and 1 large 6 inch-ish one. I also used coconut cooking spray on the pan; everything up until the syrup part went well. The result:

3 beautiful pancakes with 2 TBSP (32g) Peanut Butter & Co. Mighty Maple peanut butter spread (180 cal) and 2 TBSP blueberry syrup (100 cal).

I made the mistake of not tasting the syrup before pouring it over the pancakes. It was AWFUL! BLEK! It tasted like tomatoes! What the heck?? I wish I had used a dipping cup like I usually do. :( Dustin poured it all over his, too. Now we’re traumatized. :( LOL I wasn’t expecting it to suck, ugghhh. The pancakes and Mighty Maple butter were fantastic though, we ate around the syrup the best we could. Such a shame because I REALLY liked the pancakes! The texture and flavor were awesome, but I ruined them with my impulsive syrup pouring. :cry: Lesson learned. Make Dustin taste-test first. ;)

Thankfully dinner was much better than the flapjack fiasco. I went to Hannaford with my mom today. I wanted to get some fresh produce and bread for Dustin. Of course I ended up with a lot more than that, but I didn’t totally overdo it. Mom isn’t as patient of a cart-pusher as Dustin is. She doesn’t go for me reading labels for 20 minutes in each aisle. She shops like she has 60 seconds to collect as many items as possible before the contest is over LOL. I was planning to make some kind of burger, so I picked up some fresh rolls from the bakery. When we got home, I found this box of Applegate Farms turkey burgers in the freezer that I have been saving since who knows when being I don’t even remember buying them. :roll: lol

The expiration date was still a few months away, so I probably bought them in January. :D I grilled them on the indoor griddle while I roasted a large sweet potato and onions in the oven and steamed broccoli.

I almost forgot about the sweet potatoes :o They were a little overdone, on the verge of too crispy, but I took them out just before it was too late. Phew!

My plate

  • 1 Applegate Farms organic turkey burger (190 cal) on an onion roll (170 cal) with 1/2 TBSP Heinz no salt added ketchup (10 cal), a thick slice of roasted red onion (20 cal) and 14g gorgonzola cheese spread (45 cal)
  • Roasted sweet potato slices coated in EVOO (~125 cal)
  • Steamed broccoli, plain (~40 cal)

Calories: ~600, 435 just for the burger

Delicious. I love the onion rolls that Hannaford sells. They’re 170 calories and 270mg sodium, which isn’t that bad considering 2 slices of most breads are about the same.

Remember last night how I was saying that I wanted a salad but I was cold and didn’t know if I still wanted it? Chilly and all, I went ahead with it anyway and I’m glad that I did. It was awesome, and really simple to throw together.

Tofurky Pinwheel Salad

  • Bed of romaine lettuce (15 cal)
  • 6 grape tomatoes (30 cal)
  • 4 slices Tofurky (80 cal) stuffed and rolled with 2 slices Sargento reduced fat Swiss cheese (120 cal), split between the 4 slices of Tofurky
  • Red wine vinegar (10 cal) and 2 TBSP Bragg healthy vinaigrette (90 cal)

Calories: 345

LOVED it!! I know some of you are afraid of “fake meat” products, but Tofurky is a great one. It’s basically flavored and pressed (non-GM) tofu and not terribly high in sodium; 5 slices = 300mg. Some facts from their web site:
