Carb Crazed

I haven’t had a crumb of real bread or pasta or anything super starchy since Saturday, so pizza was on the brain when my intermittent fast was over tonight. I tried to go the full 16 hours like I had planned, but the mushroom and cuke salad from yesterday was calling me and I had to answer it. So tasty!

I ordered a small (personal, as they call it) veggie pizza from Pizza the Rock with NO cheese and all the veggies they had; Dustin ordered a cheese. And it was swimming in cheese. Glad I skipped theirs and added my own at home.

I went crazy on the carbs for this meal. Then again, maybe not. I prepared a fruity salad while the pizza was on its way via the mom mobile.

~2 cups Ready Pac Santa Barbara mix, ~1 cup fresh baby spinach, 7 blackberries, 4 strawberries, and 1/3 small honeycrisp apple slice thinly dressed with 2 t. EVOO + 1 TBSP red wine vinegar + Himalayan sea salt + black pepper.

I added 1 oz Chevre goat cheese (70 cal) and 5g shaved parmesan cheese to my (3) pizza slices and popped them in the oven to warm it up a bit.

Best. pizza. in. months. !! It was amazing. The veggies were just right, the crust was crisp yet doughy, and the goat cheese? Creamy amazing awesomeness.

I did feel a bit of a carb crash after this… and bloated. But I took my antibiotic right after this carb fest and there hasn’t been any thunder down under. YAY! Perhaps the first time I took it it really was just something I ate that day? Not sure. Going to finish the RX though. Adios sinus infection!

Today’s probably going to be an all-nighter. We woke up late, late, late today. So that was sort of… breakfast.

I have two cauliflowers to use up. I was overambitious in the produce department the other day. I think I’ll go to the kitchen and play for awhile. I’m starting to feeling better, I have way more energy after the pizza than I’ve had. But my sinuses were taxing my energy, so hopefully they’re getting better too.

I really hate how early it gets dark out. Such a downer for food photography. Means I have to abide by a—gasp—day schedule if I want to get maximum daylight. Sad smile Boo. hehe

Thanksgiving is next week?! Holy guacamole! I better shake a leg… so much to do in the next few weeks!!

Have you planned anything new for Thanksgiving this year? I think we’re ordering a smoked turkey online, precooked. We’ve never had one and want to try it. I’ll let you know how that goes. For now, full-time reality. Work to be done, recipes to be created, sheets to be changed, pet hair to be discarded. Yay, life! Rolling on the floor laughing
