Vegan Sloppy Joes (Peas and Thank You Sloppy Josephine Recipe!) and Ultra Cheap Organic Quinoa

by J3nn (Jenn's Menu and Lifestyle Blog) on September 22, 2011

I have thought about Mama Pea’s vegan Sloppy Josephines ever since I first made the reci”pea” back in February! They are veganized by using lentils in place of meat—brilliant, and tasty!

It’s technically still summer for a few more hours, so this is the last sandwich in the Summer Sandwich Series. But don’t worry, the sandwich series will go on! A day without sandwiches is not a good day, in my opinion. hehe

I made a pound of dry lentils the other day with plans to make them. My mouth was watering just thinking about them. Once the lentils are cooked, everything comes together so easily. It’s a fantastic vegan recipe that you’ll make again and again. I know I will!

If you use gluten-free bread and gluten-free BBQ sauce, the rest of the recipe is inherently gluten-free. The only modifications I made were that I cooked my onions and garlic in a generous amount of vegan organic palm shortening, did not cook my lentils in vegetable broth, and I added about 2 TBSP of A1 steak sauce (vegan, gluten-free). It turned out so well that it doesn’t even need a bun, you will want to eat it straight out of the pot!! But the bun makes it like a true Sloppy Joe, or at least I think it does. I’ve never had a traditional Sloppy Joe, so I have no idea, lol. If it’s anything like this vegan variation, sign me up as a lifelong Sloppy club member.

I made a ginormous batch, so I froze half of it and have been eating the fridge leftovers every day for the past 3 days. It’s SO GOOD! YUM x a zatillion~~!

Lots of crunchy pickles are highly recommended on the sandwich. I add about 6 crunchy gherkins to mine. Love it! Thanks, Mama Pea! Rolling on the floor laughing Visit Peas and Thank You for this amazing vegan recipe.

We went to BJ’s Wholesale Club in Wappingers Falls yesterday afternoon to stock up on our household items for the next month or two. They typically don’t carry many food items that I’d buy except for dry and canned pantry staples, but I look through all the aisles anyway. I found something incredible: 2-lb bags of organic quinoa for $4.99!!! Disappointed smile Surprised smile Open-mouthed smile

I bought 3 bags! Thumbs up I usually buy quinoa for between $5-8 for one pound or less, so 6 pounds for $15 bucks is a MAJOR steal. And it’s organic! Love. Red heart

We also received another delivery of grape tomatoes from Aunt Gina’s garden:

We eat well. Smile

Do you like Sloppy Joes? Have you had vegan versions of them? Which do you prefer? I prefer  the 100% plant version! I loooove lentils, so putting flavoring on them and placing them in between nice pieces of bread, I’m pretty darn happy. Flirt male

My in-laws, which you probably guessed, canceled on us… again. Sigh. So now Dustin and I have a whole week open all to ourselves (as usual, lol). We’ll probably just take advantage of the time gain and work, maybe take a day trip to the city, and quite possibly a trip to Trader Joe’s or Whole Foods!! I love gaining free time. Weeeeeeeeeeeeeee!

Tummy is rumbling and I need a shower. Gotta go!

Are You Feeling Open-Minded Today?

That’s what I ask Dustin when I’m trying an “exotic” recipe on him. I’ve had this box of gluten-free quinoa pasta for probably longer than we’ve lived in this house. I decided to use some of it in an impromptu pasta + bean dish with cheezy nutritional yeast mustard sauce. It’s surprisingly just like regular [...]

Wii and Mii

Poor Dustin. He’s been doing 36-hour shifts to finish a project, so he’s been going to sleep hours ahead of me when he finally does crash. How does a self-employed person who works at home have to do 36-hour shifts? If you’ve ever known a computer programmer that is blessed plagued with hyperfocus, you’d understand. [...]

Will Walk for Gyros

February 21, 2011 Jenneral Posts

I didn’t do intermittent fasting yesterday, I just ate normally—whatever that means for me, lol. We ordered lunch from Yanni’s Gyro Express Cafe in Monticello. They make the most delicious fresh pitas and orzo salad. Dustin’s gyro platter comes with a small Greek salad that he donates to me. Yay! I had him request no [...]

Cheezy Quinoa

February 17, 2011 Intermittent Fasting

I hate when my battery dies midway through taking pics. It doesn’t happen often with my Rebel, so it caught me by surprise. I hardly ever check the battery status because it holds a charge for so long—I haven’t charged it since Xmas. Probably should pay more attention to that! I’m getting more use out [...]

Lunch and Dinner With The Mister, Plus One

November 7, 2010 Jenneral Posts

We went to Middletown to do a little shopping yesterday, so we stopped for a quick lunch at Something Sweet Cafe while we were in the neighborhood. Ok, we weren’t exactly in the neighborhood; we were on the other side of town, but it’s worth going the extra mile or three for. I ordered a [...]

Almost Grain Free Diet Day 21: Quinoa Breakfast Cereal

October 11, 2010 Grain Free Diet

I really wanted a bowl of cereal on Sunday morning, but I was back in the “no grains” groove after my stray day on Saturday, so that wasn’t going to happen. Or, was it? I haven’t eaten much quinoa on this 31 day challenge even though I said I was going to keep it in [...]

Almost Grain Free Diet: Days 1 and 2

September 22, 2010 Grain Free Diet

You read that right: I decided to do an almost grain free diet for the next month!! From September 20th to October 20th I’m going to cut out almost all grains and legumes, and drastically reduce added sugars. What does almost mean? Well, I’m including “cheat” meals and days off, of course! I’m adventurous, I’m [...]

I have that 50 Cent song in my head and it seemed appropriate for a title being it has been DAYS since my last update. hehe I’ll try to catch up right now though! Thankfully, Dustin is all better now, so we have been on the go since the weekend. On Saturday we decided to [...]
