I have thought about Mama Pea’s vegan Sloppy Josephines ever since I first made the reci”pea” back in February! They are veganized by using lentils in place of meat—brilliant, and tasty!
It’s technically still summer for a few more hours, so this is the last sandwich in the Summer Sandwich Series. But don’t worry, the sandwich series will go on! A day without sandwiches is not a good day, in my opinion. hehe

I made a pound of dry lentils the other day with plans to make them. My mouth was watering just thinking about them. Once the lentils are cooked, everything comes together so easily. It’s a fantastic vegan recipe that you’ll make again and again. I know I will!
If you use gluten-free bread and gluten-free BBQ sauce, the rest of the recipe is inherently gluten-free. The only modifications I made were that I cooked my onions and garlic in a generous amount of vegan organic palm shortening, did not cook my lentils in vegetable broth, and I added about 2 TBSP of A1 steak sauce (vegan, gluten-free). It turned out so well that it doesn’t even need a bun, you will want to eat it straight out of the pot!! But the bun makes it like a true Sloppy Joe, or at least I think it does. I’ve never had a traditional Sloppy Joe, so I have no idea, lol. If it’s anything like this vegan variation, sign me up as a lifelong Sloppy club member.
I made a ginormous batch, so I froze half of it and have been eating the fridge leftovers every day for the past 3 days. It’s SO GOOD! YUM x a zatillion~~!
Lots of crunchy pickles are highly recommended on the sandwich. I add about 6 crunchy gherkins to mine. Love it! Thanks, Mama Pea!

We went to BJ’s Wholesale Club in Wappingers Falls yesterday afternoon to stock up on our household items for the next month or two. They typically don’t carry many food items that I’d buy except for dry and canned pantry staples, but I look through all the aisles anyway. I found something incredible: 2-lb bags of organic quinoa for $4.99!!!

I usually buy quinoa for between $5-8 for one pound or less, so 6 pounds for $15 bucks is a MAJOR steal. And it’s organic! Love. ![]()

Do you like Sloppy Joes? Have you had vegan versions of them? Which do you prefer? I prefer the 100% plant version! I loooove lentils, so putting flavoring on them and placing them in between nice pieces of bread, I’m pretty darn happy. ![]()
My in-laws, which you probably guessed, canceled on us… again. Sigh. So now Dustin and I have a whole week open all to ourselves (as usual, lol). We’ll probably just take advantage of the time gain and work, maybe take a day trip to the city, and quite possibly a trip to Trader Joe’s or Whole Foods!! I love gaining free time. Weeeeeeeeeeeeeee!
Tummy is rumbling and I need a shower. Gotta go!
