Who else lives here? Holla if you like your veggies stacked to the sky! ;)   Jessica is probably cringing right now, lol.

I picked up some gorgeous brussels at Shop Rite yesterday…

I’ve had that little purple cutting board for about 10 years now. It’s been very durable over the years! Do you have favorite kitchen toys that you’re not willing to part with despite being a little dated?

My absolute favorite way to eat brussels sprouts is roasted with a little EVOO + garlic powder. Now that the hot summer temps are gone, I’m not afraid to turn the oven on. LOVE fall weather!!

Trident salmon burger (130 cal) sandwiched in between a tall pile of veggies on a Food for Life sprouted wheat roll (150 cal), this meal was totally vegalicious! :D

I’ve never used radicchio on a sandwich, but I had this cute little head of it that looked too pretty to not include in this. Along with some thinly sliced red onion, avocado, plum tomato and a few drops of no salt added mustard, this was QUITE the salmon burger!! YUM You’re probably wondering how I got my mouth around that. Well, I squished it down as much as I could and removed a little of the radicchio, but I didn’t waste it, I still ate it. hehe

I’m wondering if you stretched all the veggies in today’s lunch salad if it would reach the clouds? Might come close!

I went for an hour walk around the ‘hood with my mom, then came home, took a shower and by then it was dark out, but just about lunchtime around here! :lol: I decided a mammoth sized salad was in order.

  • Romaine lettuce, radicchio, and spinach; red onion, carrots, green bell pepper, celery, grape tomatoes, and half of an itty bitty avocado that was almost the same size as its pit drizzled with red wine vinegar and 1 TBSP cold pressed organic EVOO

Plus a 1 TBSP raw almond butter (90 cal) sandwich with 1 TBSP grape fruit spread (40 cal) on 2 slices Ezekiel 4:9 low sodium bread (160 cal)

Doesn’t a triangular cut sandwich make you nostalgic for childhood? :)

That salad took me 60 minutes to eat! :shock: Crunchy munchin’ ain’t easy, but it sure is fun.

I have some chores to do, yay! :roll: I want a butler.

I’ll put it down on my wish list and see how that goes, LOL.

I Went, I Saw, I Gnawed
