Batteries Required

I needed to replace the battery in my food scale this morning and recharge my camera’s battery. Luckily I got through breakfast with the low-battery warnings. My Canon Rebel is REALLY good at holding a charge. I only recharge it every 4-8 weeks, even though I take 100-300 pictures a day! :shock: Pretty snazzy. :)

Breakfast was absolutely phenomenal. Spinach, mushroom, and Laughing Cow light cheese omelet with Food for Life Genesis 1:29 toast and a Granny Smith apple:

I’m not much of a coffee or tea drinker, just iced water for me!

It came out soooo fluffy!! Cholula was on standby. :twisted: I used several drops on my omelet… Mmmm!

  • I scrambled 1 large cage free egg (75 cal) and 1/4 cup liquid egg whites (30 cal) together while I sauteed a handful of fresh baby spinach (10 cal) and 1 sliced mushroom (8 cal) in 1 teaspoon EVOO (40 cal) in a nonstick pan. When the spinach was wilted down, I poured the egg over it and immediately added the Laughing Cow light Swiss cheese wedge (50 cal) in and let it cook until it was lightly browned on the bottom, then I flipped it over, covered the pan with foil and shut the heat off. I let it sit there for about 5 minutes before plating it.
  • 2 slices Food for Life Genesis 1:29 bread (160 cal) lightly toasted and buttered (100 cal) with 1 TBSP butter shared between both slices.
  • 3/4 of a medium-ish Granny Smith apple (~60 cal)

Calories: ~533, 213 just for the omelet

Best omelet I have had in a long time!! Very, very tasty and filling. The creamy Laughing Cow cheese in the center was heavenly. I highly recommend trying it in an omelet if you haven’t already. YUM! :)

Today is supposed to be 91F degrees! 8-) Aaaah, noooooo!! I hate heat. :( I’m going to workout before it gets too hot. Be back after lunch or whatever snack/meal comes first. :D

Crazy Low

I was surprised to discover that you can make a breakfast sandwich that is crazy low in calories, but still filling and tasty. You just have to know how to work it! ;) Check it out:

140 calorie egg white sandwich

Chobani pineapple yogurt (160 cal) is one of the best yogurts out there!

  • 1 Thomas’ light multi-grain English muffin (100 cal) with 1/4 cup liquid egg whites (30 cal) cooked in the microwave with about 1.5 cups fresh baby spinach (10 cal) and a few drops of Cholula hot sauce. :twisted:
  • 1 Chobani pineapple yogurt (160 cal) with 4 strawberries (20 cal)

Calories: 320

Totally delicious and about 25g of protein. Win, win, win!! :) Yeah, I know Thomas’ English muffins are processed and they’re not sprouted grain and about 50 other flaws, but they are low in calories and tasty. :P The only thing this 140 cal dreamboat was missing was some fresh jalapeno peppers. I can’t get enough spicy lately. It’s like it doesn’t even register with my taste buds unless it makes my eyes water. :lol:

Is it warm where you are? It’s been sooo warm here the past few days. Well, warm to me is anything above 68F degrees, lol. I am NOT looking forward to 90F degree weather. I might try to convince Dustin to temporarily relocate to Alaska for a few months. hehe

Holey Bread, Batman!

Bagels!! :mrgreen: Not the homemade kind, either. The white, soft and chewy kind with questionable ingredients that are considered to be the devil of the breakfast world. :twisted: Oh yeah, half a dozen of them showed up in the kitchen yesterday morning. Resist them? I think not. Eat them? YES! :D

It’s been soooo hot out, I was not interested in cooking at all this weekend. It was just raining/snowing like 4 days ago, 34F degrees and then it was in the 80s this weekend. :shock: What the heck? I can’t handle temperature changes like that. I like cool, cold and freezing. I don’t do well in hot, humid and miserable. :( I’m like a penguin! So, I made some penguin juice in my Vita-Mix:

Cherry Smoothie

  • 1 cup frozen cherries (110 cal)
  • 1/2 cup nonfat lactose-free milk (40 cal)
  • 1/4 cup fat free ricotta (45 cal)
  • 1/2 teaspoon Madagascar pure vanilla bean paste (6 cal)
  • 2 packets Truvia sweetener

1 serving, 201 calories

Deeeeeeeeeeeelicious!! It tasted just like a milkshake. This ended up being my lunch yesterday, it was filling and super tasty, YUM! I really liked the few chunks of frozen cherry that didn’t get pulverized. Oh, if you’re wondering what Madagascar vanilla bean paste is, it’s this:

It’s like thick vanilla extract, only with vanilla beans in it. I picked it up at Mother Earth’s the other day. It’s expensive, but fabulous. I can’t wait to use it again.

Anyway, getting back to those bagels. Being it was hot and sticky inside and out, I decided to just make sandwiches… for Sunday dinner. lol Fine by me! Don’t have to convince me to eat a bagel. ;) I made an awesome sandwich with vegan “unchicken” salad that I got at Mother Earth’s:

I kicked it up a few notches with some fresh jalapeno slices. :twisted:

I’m a wimp though, I removed most of the seeds. :oops: I didn’t want it to completely overpower the other flavors, ya know?

  • Lightly toasted bagel with: romaine lettuce leaves, vegan “unchicken” salad, and fresh jalapeno slices
  • 1oz olive oil potato chips

Awesomeness.

I keep seeing those Subway commercials that are advertising their new breakfast sandwiches, so I decided to make one of my own this morning. Only with slightly better ingredients. Just slightly. lol

Yeah, that’s American processed cheese on there, BUT it’s organic!!!! :lol: Organic junk food FTW!

Don’t judge me, it’s cheesealicious. :mrgreen: Honestly, I don’t think it’s that bad. It’s lower in sodium than other processed cheeses (190mg) and only 50 calories. Plus, the ingredients list is wholesome, IMO. Whatever. I like it. hehe It’s also $5.50, so it won’t be used on a 4 slice grilled cheese sandwich anytime soon. Unless, of course, Dustin decides to take up cooking and make a $26 grilled cheese while I’m not looking, LOL.

I’m also proud to report that this was cooked in the microwave. Yep, it doesn’t get much more sophisticated than this. haha

  • ~2 cups fresh baby spinach (15 cal) steamed in the microwave
  • Then I poured 1/4 cup (56g) liquid egg whites (30 cal) over the spinach and zapped it for another minute or so until the egg was fluffy
  • I took it out, added 2 slices Tofurky (40 cal) and 1 slice Wholesome Valley American cheese (50 cal) and popped it back in to melt for about 20 seconds
  • Scraped it out of the bowl it was sticking to and placed it on a carby pillow, aka bagel and put some jalapeno slices on top of the melted cheese

Best.breakfast.sandwich.EVER!!! It was a sodium bomb, too. But that’s alright, I’ll soak it up (literally) for this. :)

The warm weather is making me want to do spring cleaning like crazy. Which is great, any form of NEAT should be taken advantage of as often as possible. Today, I’m going to clean out the chest freezer and put away winter clothes. And a slew of other things, I hope! Be back later. :)
