Farewell, Fun and Games!

I’m actually relieved that I don’t have any major events for the next few weeks. It seems like I’ve been in nonstop celebration mode for weeks now, lol. I’m so looking forward to a mediocre Monday! We have loooooooooooots of leftovers, so I’m only going to buy fresh produce + dairy for at least the next 7 days, maybe longer. I’d like to go the rest of the month without buying anymore pantry staples. We have tons of bread in the freezer, too. There’s not a pinch of room left in the fridge or freezers, lol. Well, that ginormous cheesecake is taking up half a shelf, but still, we have enough to last us a few cold winters, or hot summers. :P

Our first mission is to use up all of the leftovers from the taco party the other night. We probably have 5 lbs of shredded cheddar cheese in the fridge. :shock: I made a simple breakfast using up some of it.

  • 1 Joseph’s 100% whole wheat mini pita bread (80 cal) stuffed with: 2oz shredded chicken tenders (60 cal) mixed with 1 TBSP Hellmann’s olive oil mayo (50 cal), and 14g Cracker Barrel cheddar cheese (55 cal)
  • Average nectarine on the side (60 cal)

Calories: 305

SO GOOOOOOOOOD! Surprisingly filling, too. YUM!

I went straight from breakfast to-> dinner. Mom made a pot of sauce, per her usual Sunday routine. The pasta of choice was thin linguine. I love eating my salad and pasta together. It tastes so yummy. I love when vinegar + EVOO get on the pasta, Mmmm!

I don’t think they eat much, though. :lol: I tossed my salad in 1 TBSP Bragg healthy vinaigrette (45 cal) and red wine vinegar (10 cal).

Garlic bread made with butter and Garlic Gold Nuggets Italian seasoning

Deliciousness. I estimate this meal to be around 550 calories, give or take. :P Glad it was meat-free, I missed my veggie meals. :)

Then Days Went By

I have that 50 Cent song in my head and it seemed appropriate for a title being it has been DAYS since my last update. hehe I’ll try to catch up right now though! :D Thankfully, Dustin is all better now, so we have been on the go since the weekend.

On Saturday we decided to order a variety of Asian takeout from our local restaurant. We got a little of everything. I didn’t want to totally blow my low sodium streak, so I ordered steamed veggies and steamed shrimp, no sauce. Most Chinese/Asian restaurants will do this for you if you ask, and a lot already have the option on their menu. If they refuse, I wouldn’t patronize that establishment. ;)

While Dustin went to pick up our order, I went to the condiment cabinet…

…and took out a few ingredients to make my own Asian-y sauce. Bragg liquid aminos is my favorite soy sauce substitute. It has 160mg sodium per 1/2 teaspoon, but the best thing is that a little goes a long way. So I made a sauce with:

  • 1 TBSP sesame oil (120 cal)
  • 10g Bragg liquid aminos
  • 2 TBSP brown sugar (90 cal)
  • Minced garlic (5 cal)
  • 1 TBSP apricot Polaner All Fruit 40 (40 cal)
  • 1 TBSP rice wine vinegar (5 cal)
  • Green onion

Ok, this was NOT the best dipping sauce I have ever made. I whisked it together furiously, but it kept separating anyway. :( It needed some kind of binder, like corn starch or xanthan gum. I didn’t intend to use very much of it anyway, but I ended up using almost none due to it not staying together. BUT I was mainly interested in the sushi anyway. :P

I’m still new to sushi, so I like to sample different ones to see which I like best. So far I like California rolls best, followed by Philadelphia rolls. I don’t care for anything with sauce on it, like mayo sauces, nor do I care for deep fried ones. I like the simplest, freshest tasting ones. Creamy in the center, but dryish on the outside seems to be what I like best. I like smoked salmon inside of something, but I haven’t been brave enough to try any other raw sushi. I am very much about texture and being I don’t like smoked salmon on its own, I probably wouldn’t like raw fish. *shrugs* I could be wrong though, it might surprise me and win me over. :)

Unfortunately, sushi doesn’t taste that great the next day, so a lot of this went to waste. :( I ate 2 shrimp, none of the rice and all of the veggies from my plate, but I was mainly interested in that fabulous sushi. :mrgreen: Sushi fills me up VERY quickly! I don’t think I even had half of the California roll before I was full. :shock: I think the chopsticks slowed me down LOL. Maybe I should use them for everything I eat? :idea:

I love string beans… especially the kind tossed in buttah! hehe Everything was delicious. Mom’s cooking is the best. :)

Monday we went out for some power shopping. I was so disappointed that I couldn’t find any Spring nightgowns! :( Stores didn’t have any to choose from, must winter leftovers. I couldn’t believe it. They had a lot of top and bottom sets, but very little of what I was looking for. Booo! I’ll just have to try again I suppose. ;) I did find a lot of goodies at Mother Earth’s though!

Chocolate chip Weetabix! :o I’ve had it before and it’s fantastic. Calorie-dense at 210 calories per serving, but I like to eat half a serving for a treat.

The box of Samoas was gone in 3 days flat. Didn’t they used to be square shaped or is that just my imagination? Either way, these are possibly my favorite cookie ever. I’m going to recreate them someday, just watch! :lol:

I decided to start taking vitamins again. I do believe in trying to getting all of your nutrients from your food, but it can’t hurt to take some extras to be sure. I also wanted to try Vitamin B complex for energy during the day. I made the mistake of taking it on an empty stomach the day before yesterday. Ugh, it nauseated me. :oops: Lesson learned!

I’ve been hearing about nutritional yeast around the blogosphere for the longest time. Some say it tastes like cheese, even though it’s vegan. I forgot to pick it up at Mother Earth’s, so I went to the Asian farm stand to pick some up. I haven’t tried it yet, but I love the nutritional facts!

Wow! 8g protein, only 10mg sodium and 70 calories per serving. I cannot wait to try this in a sauce!! It sounds fantastic. Has anyone tried it before? What’s it like? Recipes, please! :)

Dustin and I went to the doctor yesterday. Dustin got a clean bill of health, but me, not so much. :( My blood pressure is high, as usual, and my heart beat is fast. I’ve had high blood pressure and tachycardia (fast heartbeat) all of my life–since infancy. They administered an EKG and it came back normal. They also took a urine sample, UGH I hate that. She wants to check my thyroid, but she’s thinking I might have a pituitary problem. I’m not surprised, I’ve suspected it for awhile, but haven’t wanted to open that can of worms. I can’t let it go on forever, I need to just have all of the appropriate testing done and see what’s going on. She gave me a refill for my diuretics and another RX to lower my blood pressure, but I’m not sure if I want to take it. Of course she advised me to steer clear of high sodium foods and increase my potassium. So I’m going to behave myself, sodium-wise, for the next 30 days in an effort to lower my blood pressure. The odd thing is, no one in my family has any of the symptoms that I have. My theory is that it’s because I was fed soy formula as a baby and everyone else in the family was breast fed. I think the evil soy triggered all sorts of strange hormonal problems in me. :( I don’t know, frustrating though.

Ice and Rice

It seems like every time my cousin Tricia comes over we have some sort of hazardous road condition. This time we had icy roads from melted snow, but thankfully she made it to her destination safely after dinner. I wasn’t sure if I was going to actually make it through dinner on only a few hours of sleep, but once I was up and showered, it was like I had a full night’s sleep. 8 hours is SO overrated. ;)

Sunday Dinner Menu:

  • Roasted chicken marinaded in extra virgin olive oil, garlic, white wine, red onion, salt, and black pepper.
  • Mushroom and green pea risotto
  • Roasted brussels sprouts !!
  • Tossed salad
  • Italian bread

My new favorite green gems! <3 I roasted them on 450F for about 15 minutes after coating them in EVOO, garlic salt and black pepper.

Assorted chicken sections. We pan-seared them in EVOO and a little more white wine before popping them in the oven. When they were fully cooked, we brush Polaner apricot fruit spread over them and put them back in the hot oven for a few more minutes.

The risotto that nobody loved except for me. :evil: lol Personally, I thought it was great, but the other fusspots aren’t risotto people I guess! :(

Mushroom and green pea risotto

  • 2 cups Arborio rice
  • 1 quart low sodium chicken or veggie broth
  • 1 medium red onion, diced
  • 1 TBSP EVOO
  • ~1 cup frozen green peas
  • ~2 cups sliced mushrooms
  • ~1/2 cup grated parmesan cheese
  • Water as needed
  • Salt, optional (I didn’t add any)

1. In a medium to large saucepan, add in EVOO, onions, and rice;sweat onions and toast rice for a few minutes before adding in any liquid
2. Slowly add in broth, stir continuously on low to medium heat
3. Add in more liquid as needed, keep stirring
4. When rice is almost cooked, add in peas, grated cheese and mushrooms, stir

Servings vary

Note: It’s very important to keep adding in liquid slowly and stirring to 1-) Prevent burning/sticking and 2-) To achieve the creaminess of risotto. Otherwise you’ll just end up with regular cooked rice. Cook time takes about an hour.

I poured a glass of white wine while I was cooking, which lasted all through dinner. I’m becoming a big fan of white wine (Pinot Grigio) I totally earned those calories stirring the risotto over a 450F oven for an hour straight. LOL

My mom picked up Italian pastries from the bakery this morning. Unfortunately, they look better than they tasted. They were horrible! Very dry and poor quality. I had one of the mini cannolis, but it really wasn’t worth it. :(

Everything was delicious, despite what the naysayers think of the risotto! :) This was the only full sized meal I ate today, plus some leftover risotto later on. I don’t have any reservations about having one big meal for the day and a few snacks or whatever combination the day brings. I also don’t see anything wrong with fasting for a day here and there. Millions of people all over the world fast for religious and spiritual reasons and they are perfectly fine. Like I always say, it’s not what you eat or don’t eat in one day that matters, it’s what you eat (or don’t eat) over several days, weeks and months that matters most.

Dustin just changed the sheets on our bed because I was too tired. He’s the best husband EVER!! hearts_smiley He is always willing to help with housework, BUT I prefer he doesn’t help cook. Like for instance tonight when we were preparing dinner, I asked him to grate the parmesan for me. Simple, right? Not for Dustin. :lol: He was taking WAY too long, so it ended up being one of those things that you have to do if you want it done right. lol We’d still be here waiting for dinner to get done if I let him finish. LOL Ah well, cooking is not his forte. No worries, he’s good at just about everything else. :D

Time to go feel those fresh, clean sheets! LOVE!
