Nostalgia

An intoxicating scent in the breeze, a reminiscent song you haven’t heard in ages, a favorite childhood TV show, a particular taste that tickles your taste buds, or the first snowfall of the season can all bring us back to the happy memories associated with them. I have so many fond childhood memories that I wish could come to life once again. I’d do anything to be able to revisit the 1980s, even just for a few moments. I’m sure every generation feels that they are living in the best times, but growing up with the Smurfs on Saturday morning, Michael Jackson and Bruce Springsteen on the radio every other song, wearing jelly shoes in the summer, and Speak-n-Spell, Cabbage Patch Kids and Shrinky Dinks under the Christmas tree are hard to argue with. :P

So many foods make me nostalgic, especially ravioli. My family bought the most delicious ones from an Italian grocery store that went out of business in the late 80s. I haven’t had ravioli like it since then. But I’m of the opinion that all ravioli is good, so I picked up a box from Shop Rite the last time I was there. I usually prefer the round ones, but once in awhile I’m in the mood for square ones. I’m sure some people are wondering what the difference is, and there really isn’t one. Slight textural difference at the most.

Yes, I buy the generic store brands now and then! The ingredients list was basic: flour, ricotta, etc., and they looked delicious on the box. There were 4 servings in the box, 240 calories each, so I made half the box for Dustin and me on Friday night and warmed up a jar of this Bove’s organic sauce that I’ve had in the cabinet for months. What was I saving it for? It’s not like wine, it doesn’t get better with age. :lol:

The raviolis were fantastic! I sprinkled a little grated parmesan on before I ate them, SO GOOD! I estimate the calories for that bowl to be around 350-400 calories, not sure exactly, but what I assume from half of a half of the box.

Saturday night we went out for sushi at Kingston Wok. I had a Boston roll and a shrimp tempura roll.

We also had thai chicken rolls, but I felt uncomfortable taking too many flash pictures in the dark restaurant with others so close by, lol. Almost every time I take pictures a staff member will ask me about them. Some of them are so fascinated, some aren’t sure what a blog is, lol. My business cards come in handy in those awkward situations. :oops:

Sunday, I made shredded pork tenderloin tacos for Sunday dinner–once again out of my typical Italian cuisine element. They made me nostalgic for Chipotle, but I think these rivaled Chipotle through and through. :D

Dustin’s iPad is awesome. I didn’t think they were anything special at first, but I think I’ve used it more than him! It’s handy to have in the kitchen to look up a recipe or something. I dig it!

These tacos were AMAZING! And unbelievably simple. I put 2 pork tenderloins in the crockpot with some chicken stock and let it cook slowly overnight (8-10 hours). Then, when it was time to eat, I took them out and shredded them with a fork. They fell apart so easily; very, very tender. Then I added it to a nonstick pan with 1 TBSP EVOO and a sliced onion, along with some chili powder and cumin. After a few minutes, it was ready to fill a taco shell. On mine, I put: shredded pulled pork, reduced sodium Sargento cheddar cheese, romaine lettuce, diced tomato, a few small dollops of Chobani 0% plain Greek yogurt, and a few slices of fresh jalapeno. I also mashed an entire avocado with about a teaspoon of lime juice and had some fresh guacamole on the side. “I can’t believe it’s not Chipotle.:D

Gingerbread went to the vet for an x-ray today. They said they are waiting for his treatment. Apparently it’s hard to get, they’re trying to get it from Mexico, Canada and Europe, whichever will be easiest. The vet called and said his x-ray showed his intestines are twisted and would need to be surgically altered OR he swallowed a string. :shock: He’s not sure, but he said he’s never seen anything like it. If he did swallow a foreign object, he’ll need to have an operation to remove it. :( The doc said to give it a few more days to see if it passes, it not, they’ll have to go in. When he came home, his appetite came with him!! He didn’t stop eating all day, even though they didn’t do anything but take an x-ray. Maybe the anesthesia made him hungry or made his stomach feel better? Not sure. We’re just happy that he’s eating again, but concerned about what’s going on in his stomach. :? Other than that and being a little woozy from the anesthesia, he seems completely normal, as if there’s nothing wrong, which is a major plus. Hopefully his treatment will come in soon so we can kick FeLV’s butt!! :mrgreen:

I desperately need some fresh produce. Even my frozen veggie supply has been depleted! :o I went down to the freezer last night to find something, anything, being there’s only a few leaves of lettuce in the produce bins and came up with just a small bag of asparagus. How did this happen?! I usually have a 4 year-supply in case armageddon happens and I can’t get to Shop Rite, lol. Definitely going shopping today. Hooray for plants!!! <3

Then Days Went By

I have that 50 Cent song in my head and it seemed appropriate for a title being it has been DAYS since my last update. hehe I’ll try to catch up right now though! :D Thankfully, Dustin is all better now, so we have been on the go since the weekend.

On Saturday we decided to order a variety of Asian takeout from our local restaurant. We got a little of everything. I didn’t want to totally blow my low sodium streak, so I ordered steamed veggies and steamed shrimp, no sauce. Most Chinese/Asian restaurants will do this for you if you ask, and a lot already have the option on their menu. If they refuse, I wouldn’t patronize that establishment. ;)

While Dustin went to pick up our order, I went to the condiment cabinet…

…and took out a few ingredients to make my own Asian-y sauce. Bragg liquid aminos is my favorite soy sauce substitute. It has 160mg sodium per 1/2 teaspoon, but the best thing is that a little goes a long way. So I made a sauce with:

  • 1 TBSP sesame oil (120 cal)
  • 10g Bragg liquid aminos
  • 2 TBSP brown sugar (90 cal)
  • Minced garlic (5 cal)
  • 1 TBSP apricot Polaner All Fruit 40 (40 cal)
  • 1 TBSP rice wine vinegar (5 cal)
  • Green onion

Ok, this was NOT the best dipping sauce I have ever made. I whisked it together furiously, but it kept separating anyway. :( It needed some kind of binder, like corn starch or xanthan gum. I didn’t intend to use very much of it anyway, but I ended up using almost none due to it not staying together. BUT I was mainly interested in the sushi anyway. :P

I’m still new to sushi, so I like to sample different ones to see which I like best. So far I like California rolls best, followed by Philadelphia rolls. I don’t care for anything with sauce on it, like mayo sauces, nor do I care for deep fried ones. I like the simplest, freshest tasting ones. Creamy in the center, but dryish on the outside seems to be what I like best. I like smoked salmon inside of something, but I haven’t been brave enough to try any other raw sushi. I am very much about texture and being I don’t like smoked salmon on its own, I probably wouldn’t like raw fish. *shrugs* I could be wrong though, it might surprise me and win me over. :)

Unfortunately, sushi doesn’t taste that great the next day, so a lot of this went to waste. :( I ate 2 shrimp, none of the rice and all of the veggies from my plate, but I was mainly interested in that fabulous sushi. :mrgreen: Sushi fills me up VERY quickly! I don’t think I even had half of the California roll before I was full. :shock: I think the chopsticks slowed me down LOL. Maybe I should use them for everything I eat? :idea:

I love string beans… especially the kind tossed in buttah! hehe Everything was delicious. Mom’s cooking is the best. :)

Monday we went out for some power shopping. I was so disappointed that I couldn’t find any Spring nightgowns! :( Stores didn’t have any to choose from, must winter leftovers. I couldn’t believe it. They had a lot of top and bottom sets, but very little of what I was looking for. Booo! I’ll just have to try again I suppose. ;) I did find a lot of goodies at Mother Earth’s though!

The box of Samoas was gone in 3 days flat. Didn’t they used to be square shaped or is that just my imagination? Either way, these are possibly my favorite cookie ever. I’m going to recreate them someday, just watch! :lol:

I decided to start taking vitamins again. I do believe in trying to getting all of your nutrients from your food, but it can’t hurt to take some extras to be sure. I also wanted to try Vitamin B complex for energy during the day. I made the mistake of taking it on an empty stomach the day before yesterday. Ugh, it nauseated me. :oops: Lesson learned!

I’ve been hearing about nutritional yeast around the blogosphere for the longest time. Some say it tastes like cheese, even though it’s vegan. I forgot to pick it up at Mother Earth’s, so I went to the Asian farm stand to pick some up. I haven’t tried it yet, but I love the nutritional facts!

Wow! 8g protein, only 10mg sodium and 70 calories per serving. I cannot wait to try this in a sauce!! It sounds fantastic. Has anyone tried it before? What’s it like? Recipes, please! :)

Dustin and I went to the doctor yesterday. Dustin got a clean bill of health, but me, not so much. :( My blood pressure is high, as usual, and my heart beat is fast. I’ve had high blood pressure and tachycardia (fast heartbeat) all of my life–since infancy. They administered an EKG and it came back normal. They also took a urine sample, UGH I hate that. She wants to check my thyroid, but she’s thinking I might have a pituitary problem. I’m not surprised, I’ve suspected it for awhile, but haven’t wanted to open that can of worms. I can’t let it go on forever, I need to just have all of the appropriate testing done and see what’s going on. She gave me a refill for my diuretics and another RX to lower my blood pressure, but I’m not sure if I want to take it. Of course she advised me to steer clear of high sodium foods and increase my potassium. So I’m going to behave myself, sodium-wise, for the next 30 days in an effort to lower my blood pressure. The odd thing is, no one in my family has any of the symptoms that I have. My theory is that it’s because I was fed soy formula as a baby and everyone else in the family was breast fed. I think the evil soy triggered all sorts of strange hormonal problems in me. :( I don’t know, frustrating though.

Hey guys! :D I’ve been really busy the past few days, so I have a ginormous Valentine’s Day update today. heart I was going to do an update yesterday, but I got a nasty spyware infection on my laptop that Dustin took care of for me. So annoying, especially knowing exactly what it’s doing, but thankfully we cleaned it up quickly.

Let’s rewind to Friday, the 12th. We headed out to Middletown for our hair appointments and to do some shopping. With a limited selection of places to eat lunch, we went with our safe choice: The Park

My salmon was delicious, but I don’t care for salmon that is cooked with its skin on. It’s too slimy for my taste. But otherwise, it was great. The Park has such a lovely, modern Asian atmosphere, but they really need to ramp up their advertising because they’re not very busy! :( The sign outside of their building needs to be a little more catchy, too. That’s my marketing side coming out of me. ;)

Then we got our hair done, Dustin HATED his. He was supposed to have it done by Vinny, his usual, but he ended up with someone unknown and she chopped up his hair. We were pretty pissed! Thankfully mine came out great. I have bangs now; one long side one, not straight across. We’re considering hiring a hairdresser to come to our house twice a month or so, it’s so important to have a good relationship with your hairdresser, you need to communicate with and trust them just like you would a health care provider or else you’ll end up with crappy results like Dustin. He had to get it touched up the next day by someone else because the other one gave him a mullet. :shock: Seriously, she left it longer in the back and butchered on top. The girl that fixed it that next day was like, “Was it her first day?!” Ugh. Poor Dustin. :( lol

After our hair was done, Dustin reluctantly put his hat on and we headed toward the city to do some shopping. We originally planned to spend the whole weekend in the city, but we changed our plans when Aunt Flo showed up and I knew I wouldn’t feel good enough to truly enjoy myself.  :( So we decided to just do a little shopping, mainly for mom’s birthday. I didn’t want to announce my plans until I knew for sure what we would be doing, we were basically undecided up to the last minute. :lol:

We didn’t stay out very late on Friday, I was exhausted and still full from lunch, so we headed home, watched a movie and went to sleep. The next day, Aunt Flo was being her usual mischievous self, so I loaded up on Advil and continued with our plans. We decided to stay home on Valentine’s Day and eat out on Saturday night. After some more shopping, we ended up going to Cosimo’s in Middletown again, mainly because it was late and our choices were dwindling once again. It ended up being a FANTASTIC choice as their dinner menu for the evening was superb.

He didn’t do too shabbily either. He got a new laptop and scotch. ;) Presents are fun, but food and drinks are even funner. We delved into the inexpensive caviar that the guy at the import store recommended. And by inexpensive, I mean $14 and $20. We had a sampling and decide on whitefish and some kind of black. We bought 2 new caviar spoons while we were shopping on Friday in anticipation of Sunday.

You shouldn’t use metal spoons for caviar because it oxidizes the eggs. These are made from pearl I believe. We brought a cooler with ice packs with us, so we picked up a container of this while we were there:

Creme fraiche is amazing. This is the first time I had it, it really does compliment the caviar beautifully.

Salty little bites of heaven. :)

While we sipped and savored, I had a batch of whole wheat dough on standby waiting to be made into a glorious BBQ chicken pizza. I found one last way to make heart-shaped food for the holiday:

I shaped the dough into a heart!! :) Cute, huh?! I used half of the dough for a BBQ chicken pizza and the other half for just plain cheese.

Whole Wheat Pizza Dough

  • 2 cups whole wheat flour
  • 1/2 cup warm water
  • 2 TBSP honey
  • 1 package yeast (1 TBSP)
  • Salt, optional (I didn’t add any)
  • 1 TBSP extra virgin olive oil

1. Mix yeast, water and honey together; slowly add in flour and mix until dough bowl forms
2. Coat bowl and top of dough ball with EVOO
3. Cover with damp towel and let sit in warm place until it rises

I preheated the oven to 450F, then placed the dough with 1 medium diced red onion in there without anything else so the dough would get a head start before the cheese and other toppings. I took it out after about 7-8 minutes, then put the rest of the toppings on. My mom grilled a batch of chicken tenders earlier, so I chopped them up and tossed them in Hick Lickin’ Good BBQ sauce, then spread it over the dough and drizzled it with some other BBQ sauce being I ran out of Hick Lickin’ :( Then I sprinkled a generous amount of 2% cheddar cheese over the top and popped it back in the oven for another 8 or 9 minutes, until the bottom was browned.

I had to get my Reebok step board to get all of the heart-shaped pizza in the picture LOL. I love my Canon Rebel xsi, but the lens I have doesn’t work with the zoom in/out function. So my pics are always really closeup and if I want something from a distance, I have to stand way back or way up. I’m only 5’3″ and even after standing on my board, I could still barely get it in. hahaha

I am definitely going to make this again sometime soon. Next time I’ll add some green bell peppers. My veg friends: You could do BBQ tofu cubes OR omit the protein component altogether and just do cheese and veggies with BBQ sauce. Delish!

As you can see, we had a wonderful weekend, despite Aunt Flo trying to crash our celebrations! :mad: lol I felt really blah all day today, so I ate leftovers from Cosimo’s and took a day to chill after an indulgent weekend. Tomorrow is back to reality, but that’s ok, because reality is awesome, too. :D I can’t wait to use my Vita-Mix!!! I already have a plan that involves avocado. I can see a lot of smoothies and soups in my future. Weeeeeeeeeeeeeeeeeeeeeee!
