Cheap Lunch

Yesterday, I finally tried a combo I’ve been wanting to try for the longest time: Sweet potato + beans!

With a side of raw massaged kale salad <3 SO GOOD FOR YOU!

  • Raw kale massaged in extra virgin olive oil, red wine vinegar, and AlsoSalt
  • Roasted sweet potato with a bit of Kerrygold butter, topped with about 1/2 cup kidney beans tossed in Hick Lickin’ Good maple BBQ sauce

What’s even better about all of this: Everything was already cooked or ready to eat! My mom made a bunch of sweet potatoes, so all I had to do was reheat it. Oh, and don’t forget cheap!! I estimate all of this to cost around $1.00! LOL Maybe less? Tell me that isn’t freakin’ awesome. :D Yet another filling vegetarian, easy-to-make meal. Love it!

Later on, I had an incredibly tasty snack that could pass for dessert: Fage 2% yogurt with side peaches topped with Galaxy vanilla almond granola

Galaxy vanilla almond granola is the BEST granola I have ever had!! No, seriously. It tastes like biscotti! :shock: I love that it has no added oils, especially because most store-bought granolas use canola oil or some other funky, unhealthy oil. I was thrilled when I found this, and taken away when I tasted it. WOW! It’s now my go-to granola of choice.

I sprinkled a little atop my yogurt for some crunch and flavor. Perfect combo!

I had forgotten how much I like these Fage 2% yogurts with side fruits. I bought two of them the other day and I’m glad we are reunited. They are so tasty! In fact, after tasting the 2% again, I have vowed to NOT buy the 0% Fage Greek yogurt anymore. The little bit of fat gives it so much more flavor and creaminess, I can’t imagine going back to the dry 0% now. YUM x infinity.

How is your weekend going? We’re working all weekend. :( Three day weekends are often meaningless when you are self-employed and work from home. *sigh* I suppose we could take off if we wanted to, but I’d rather work now, play later when most of the country is going back to school and work. :twisted:
