I’m happy to report that Dustin’s anniversary present was finally delivered today! YAY! Now I can feel good about opening my boxes, which I still haven’t done yet. Open-mouthed smile Maybe I’ll get to it tomorrow. heh

Apparently, mom cleaned out the upstairs freezer while we were sleeping today. It was all neatly organized and missing several things that had been lingering since who-knows-when. I was pleased to be reunited with some of my favorites: A box of Trident salmon burgers and vacuum-sealed salmon fillets. Salmon burgers instantly went on tonight’s dinner menu, along with a bunch of fresh veggies chillin’ in the fridge.

White onions, romaine lettuce, red cabbage shreds, roasted Brussels sprouts, cucumber (+pickle), and plum tomato.

I threw together a little side salad with one baby cuke, plum tomato, diced white onions, parsley from my AeroGarden, sea salt, black pepper, EVOO, and red wine vinegar. I can’t get enough of these DELICIOUS white onions!

Drop of mayo + yellow mustard on the other side of the sprouted grain roll. Salmon burger (130 cal) cooked on indoor George Foreman grill, no added oils.

Brussels sprouts tossed in EVOO, garlic sea salt, and black pepper, roasted on 425F on a baking sheet lined with nonstick foil for 18 minutes, then wrapped in the foil they were sitting on and sat on the counter for about 10 minutes to cook a bit more. Soooo yummmmmmmy!!

Excellent, veggie-filled dinner. I want to go downstairs to eat the rest of those roasted Brussels, lol. Devil They’re addictive!

We have to go to sleep early tonight, we’re going to my grandma’s birthday party tomorrow evening, plus my uncle and his boyfriend (not a typo!!) are visiting from Atlanta. So, it’s a family-filled day tomorrow, with unhealthy (but delicious) Italian food from Frankie and Johnny’s (Hurlyville) and cake. Definitely doing intermittent fasting from tonight until dinner, lol.

But before I start my fast… where are those leftover Brussels? *giggles*

I Went, I Saw, I Gnawed

We saw Eclipse at the drive-in Thursday night!! First, we had dinner at Andiamo’s in Newburgh: I had the vegetable lover’s “mini pizza.” Loved the assortment of veggies!
